This is soooooo tasty.
Bacon chorizo and pesto pasta ๐Ÿคค

Ingredients:
400g pasta. I chose linguine
100g chorizo, diced
150g bacon, diced
4tsp garlic puree
1tbsp tomato puree
3tbsp red or green pesto. I used green
120ml single cream
1tbsp parsley with a sprinkle for decorating
Pinch of salt & pepper
Reserve some pasta water.

Method:
Pop your pasta onto boil with a bit of salt.
Whilst this is cooking, add the chorizo and bacon to a pan with a drizzle of oil and fry until cooked through and slightly crispy. Add in the garlic, tomato puree and pesto a pinch of pepper and cook for a few minutes then add in the cream and a tbsp parsley. Mix well, then add in the cooked pasta. Mix it all in and add some pasta water if needed, I added a little bit to get the consistency I like. Once it's ready, dish it up, sprinkle with parsley and serve. Enjoy!

Smokey chicken, egg fried rice and Chinese style curry sauce. Absolutely gorgeous and makes you feel like you've had an actual takeaway ๐Ÿคค
Serves 4

Ingredients for chicken:
3 chicken breasts
2 peppers, chopped into large chunks
2 onions, chopped into large chunks
1tsp garlic puree
Pinch of salt
1 chilli slices or 1tsp chilli flakes
Red food colouring (optional)
1tbsp smoked paprika
50g cornflour
2tbsp dark soy sauce
2 Spring onions for garnish
Sprinkle of sesame seeds for garnish

Ingredients for rice:
2 packets of microwave basmati rice or cook your own ( I cooked my own)
3tbsp dark soy sauce
2tbsp light soy sauce
1tbsp Worcestershire sauce
1tbsp Chinese 5 spice
4 eggs

Curry sauce is the mayflower curry sauce, just make this via box instructions.

Method:
Chop chicken into strips then add to a bowl with a pinch of salt and enough red food colouring (if using) to coat all the chicken. Once mixed add the cornflour to a bowl or plate and coat each chicken slice in it. Add to air fryer, spray with oil and cook on 200โฐ for 15 minutes. While the chicken is cooking you need to cook the rice if you are making it yourself. If you are using packet rice you don't need to cook it yet. Add the chopped onions and peppers to an oiled pan and cook on medium for 5 minutes. Add your chilli and garlic and keep cooking for a few more minutes. Once the chicken. Is cooked through, add this to the pan with the onions and peppers and then add in the soy sauce and smoked paprika and toss together and keep cooking for a few more minutes. Once your rice is ready (you can microwave your rice at this point) add the eggs to a hot frying pan and let them half cook whole, then start mixing and chopping until you get scrambled eggs. Add in the cooked rice with the soy sauce, Worcestershire sauce & Chinese 5 spice. Mix together until well combined. Make your curry sauce and serve it adding the spring onions and sesame seeds to garnish. Enjoy. This is honestly absolutely stunning. ๐Ÿ˜

Black pepper lemon chicken with creamy parmesan pasta โฃ๏ธ

Ingredients: (serves 2, double it for 4)
2x chicken breasts
1/2 tsp black pepper
1/2 tsp lemon zest
1tsp garlic granules
1tsp onion granules
1tsp oregano
Pinch of salt
130g tagliatelle pasta
Parsley for garnish

For the sauce:
2tsp garlic puree
100ml chicken stock
30g light cream cheese
70ml single cream
Juice of half a lemon and the zest of half a lemon
Pinch of black pepper
20g parmesan

Method:
Cook the pasta in salted water.
You will need a couple tablespoons of the pasta water at the end too.
Season the chicken with the black pepper, lemon zest, garlic granules, onion granules, oregano and salt. Add to a hot pan with oil and cook for 6 minutes each side then add to an air fryer for around 10 mins just to make sure it's cooked through and nicely crispy on the top.
In the same pan (with the chicken removed) add in the garlic puree and let it cook for around 30 seconds. Reduce the heat to medium and add in the chicken stock, cream cheese and single cream and stir until smooth.
Stir in the parmesan and lemon juice, lemon zest, and a pinch of black pepper, summer until nice and thick and creamy. Add the cooked pasta, no need to drain as the water off the pasta helps loosen the sauce once the pasta is added. Mix together and if you feel you need it to loosen and be more saucy then add some pasta water until you get the desired consistency you want. Slice the chicken, add pasta to plate/bowl then add the sliced chicken on top, sprinkle with parsley and serve. Enjoy! ๐Ÿ˜

Creamy Cajun sausage rice.

Ingredients:
8 sausages, chopped up
1 onion finely diced
2 peppers finely diced
1 & a half tbsp garlic puree
1tbsp Cajun seasoning
300ml chicken stock
100ml single cream
500g microwave basmati rice
Pinch of salt and pepper
100g grated cheese
Parsley and chilli flakes to serve

Method:
Add oil to a pan and fry off the chopped sausages until brown. Add in the onions and peppers and fry for around 4 minutes. Stir in the garlic and Cajun seasoning. Season with salt & pepper then Pour in the stock and cream and let it bubble for 2 minutes. Then add in the cooked rice. Simmer for a few minutes until thick and creamy. Turn off the heat then scatter the top with the grated cheese and add a lid and keep covered for a few minutes to allow the cheese to melt. Serve and season with parsley and chilli flakes to add a bit of spice if you wish. Enjoy! ๐Ÿ˜๐Ÿ˜‹

Creamy Cajun chicken. Now this might not look the nicest but when I tell you it's STUNNING, it really is ๐Ÿ˜
This serves 4

Ingredients:
4 chicken breasts
1 tbsp garlic puree
1 red pepper
1 green pepper
1tbsp tomato puree
420ml chicken stock
120g light cream cheese
30g parmesan
Pinch of salt & pepper
Parsley for garnish

Cajun seasonings:
1tbsp paprika
1tsp onion powder
1tsp garlic powder
1tsp oregano
1/2tsp thyme
1/2tsp cayenne pepper

Method:
Mix all the Cajun seasonings together in a small bowl, then rub half the seasoning into the chicken breasts. Place a frying pan over a medium heat with some oil and add in the chicken breasts and brown on both sides. Then remove from the pan and set aside.
Add the garlic and peppers to the pan and fry for 3 minutes then add in the rest of the Cajun seasoning with the tomato puree, chicken stock and light cream cheese, and stir until the cheese has melted.
Put the chicken back into the pan with the stock mix, and simmer on a medium heat until the chicken is fully cooked and the sauce has thickened.
Add in the parmesan and stir until melted. Serve with your choice of sides, I chose rice. Sprinkle with parsley and enjoy! ๐Ÿคค

This meal (without the rice) is only 364 calories, obviously you add the calories to what sides you choose if you are calorie counting.

Paprika & mozzarella cheesy chicken and bacon. ๐Ÿ˜‹

Ingredients:
1 pack of smoked bacon lardons
2 chicken breasts (add more per person)
1tbsp paprika
200ml double cream
150g grates mozzarella
1 ball fresh mozzarella, sliced
Pepper

Method:
Cook your chicken in a pan with the paprika and some pepper to your taste. Add in the bacon lardons and cook through. I took out a few of the lardons to put on top once served but that's optional. Pour in the double cream and let it bubble for 5 minutes then add in the grated mozzarella, stir until it's all melted and creamy. Top with the fresh mozzarella and pop under the grill until golden and bubbling. Serve with your choice of sides, I chose chips and salad but it would be nice with rice, pasta or even mash and veg. Enjoy! ๐Ÿ˜

Sloppy Joe pasties ๐Ÿ˜
This serves 4

Ingredients:
2 rolls of just roll puff pastry
Minced beef
1 onion diced
1 green pepper diced
1tsp paprika
1tbsp garlic powder
1tsp salt
240ml tomato pasatta
2tbsp tomato ketchup
1tbsp English mustard
1tbsp Worcestershire sauce
1tbsp brown sugar
Grated cheese
1 egg for egg wash
3tbsp butter
1tbsp garlic puree
1tbsp parsley

Method:
Pre heat oven at 200โฐ
Fry off your onions and peppers for 5 minutes until soft, then add in the mince meat. Stir in the paprika, garlic granules and salt.
Add in pasatta, ketchup, mustard, worcestershire sauce & brown sugar. Cook this on medium low for 10 mins then remove from the heat and leave to slightly cool.
While this is cooking, melt the butter, garlic and parsley into a small bowl and set aside.
Now it's time to prep the pastry sheets. Cut them in half so you have 4 pieces, if you are doing this for 2 people, just 1 sheet cut in half is all you will need. Put a large spoon full of the mixture onto the sheets and top with cheese, so it looks like the 3rd picture of mine. Then egg wash the outside of the pastry and the middle, lay your other sheet of pastry over the top, seal then cut down the middle, I did this with a pizza cutter. Then seal the ends. Egg wash the top all over, add some slices into the tops and cook in the oven for around 20 mins, until the pastry is cooked and browned. Once removed brush the tops with your garlic butter mixture and serve with your choice of sides. I served mine with homemade chips. Enjoy! ๐Ÿคค

Bit of a different one for me this meal. I've never made ramen and I don't usually like Thai but saw this one and really wanted to give it a try as I absolutely LOVE peanut butter. And I absolutely loved it, absolutely gorgeous and so tasty.

Thai peanut butter ramen ๐Ÿ˜
This serves 2. If you need it for 4, just double the recipe.

Ingredients:
2 chicken breasts
1tbsp smoked paprika
2tsp garlic puree
1tbsp red Thai curry paste
1tbsp light soy sauce
2tbsp peanut butter
400ml coconut milk
400ml chicken stock
300g udon noodles

For topping:
Mangetout
Coriander or parsley
Egg cut in half
Lime wedges (optional)

Method:
Fry off your chicken with the smoked paprika for 5 mins on each side, it won't be fully cooked but that's ok as you'll be adding it to the sauce to cook later. Once it's had it's 5 mins on each side, put it on a plate and set it aside.
In the same pan add in the garlic, red Thai curry paste, soy sauce and peanut butter. Give it a really good mix then add in the coconut milk and chicken stock, bring to a boil and then lower the heat to medium low and leave to simmer for 5 minutes. Add the chicken back in the pan with the broth and place a lid on and reduce to low and leave to cook for 15 minutes. While this is cooking pop your mangetout into cook, ( I steamed mine for 10 mins). I popped my eggs into boil for 6 minutes at this stage too. I added 1tbsp of cornflour mixed with 1tbsp of water to make a slurry and added it to the broth just to make it slightly thicker as I don't like the watery texture like a proper ramen but that's personal preference.
Pop your udon noodles in a microwave safe bowl with a couple tablespoons of water and cook for 1 minute, stir and cook for another 1 minute. Now taste your sauce and if you want extra of anything at this stage you can add in extra red Thai curry paste or peanut butter. I ended up putting another tablespoon of peanut butter in. Remove chicken and slice into slices and keep aside. Now it's time to assemble. Place your drained udon noodles into large flat bowls, then ladle on your Thai peanut broth to cover the noodles. Place the chicken on top with the mangetout, egg and a sprinkle of coriander or parsley and your lime wedges if using. (I didn't) You are now ready to serve and enjoy! ๐Ÿ˜๐Ÿ‘Œ๐Ÿป

Hot honey halloumi pasta ๐Ÿ‘Œ๐Ÿป

Ingredients:
240g pasta
150g reduced fat halloumi
1 red pepper, diced
1 large onion, diced
150g light cream cheese
vegetable stock cube for pasta water
150g cherry tomatoes, halved
1tbsp smoked paprika
2tbsp garlic granules
1.5tbsp tomato puree
1tsp onion granules
3tbsp sweet chilli sauce
4tbsp hot honey (if you haven't got this, use sriracha and honey mixed together)
parmesan for garnish
Parsley for garnish

Method:
Get your pasta on to boil, and add in the stock cube to the pasta water. Dice the pepper and onion, and cut the halloumi into slices.
Fry off the onion and peppers for a few minutes until soft then add in the seasonings, cherry tomatoes, tomato puree and sweet chilli sauce. Give this a good stir then add in around 150g of the pasta stock water, let this reduce down a little then add in the cream cheese. Stir until fully combined and the sauce has thickened slightly. Put this to one side, and in a different pan, fry off the halloumi in the hot honey until it's browned. Stir the cooked pasta through the sauce mix and coat evenly cooking for a couple minutes. Dish the pasta up, add the halloumi on top with parsley and a sprinkle of parmesan cheese and serve. Enjoy! ๐Ÿคค

Cowboy butter chicken ๐Ÿ˜

Ingredients:
3-4 chicken breasts
1 onion, sliced
1tbsp Italian seasoning
1tbsp cayenne pepper (use less if you don't want it as spicy)
2tbsp Worcestershire sauce
30g salted butter
2tbsp Dijon mustard
75ml chicken stock
1tbsp garlic puree
1tbsp dried parsley
1 lemon

Method:
Fry off the chicken, onion, worcestershire sauce, Italian seasoning and the Cayenne pepper until the chicken is cooked. Add in the garlic, butter, parsley and Dijon mustard, the juice of the lemon and the stock and simmer until it all thickens. Serve with your choice of sides. I chose creamy mashed potatoes and tenderstem broccoli. Enjoy! ๐Ÿ‘๐Ÿป
