This is soooooo tasty.
Bacon chorizo and pesto pasta ๐คค
Ingredients:
400g pasta. I chose linguine
100g chorizo, diced
150g bacon, diced
4tsp garlic puree
1tbsp tomato puree
3tbsp red or green pesto. I used green
120ml single cream
1tbsp parsley with a sprinkle for decorating
Pinch of salt & pepper
Reserve some pasta water.
Method:
Pop your pasta onto boil with a bit of salt.
Whilst this is cooking, add the chorizo and bacon to a pan with a drizzle of oil and fry until cooked through and slightly crispy. Add in the garlic, tomato puree and pesto a pinch of pepper and cook for a few minutes then add in the cream and a tbsp parsley. Mix well, then add in the cooked pasta. Mix it all in and add some pasta water if needed, I added a little bit to get the consistency I like. Once it's ready, dish it up, sprinkle with parsley and serve. Enjoy!
