🥗Chicken and avocado pasta salad 🥗
This vibrant bowl is a real taste-and-texture treat! Creamy avo, crisp veg and tender chicken are lifted by peppery rocket, a fresh squeeze of lime and a sprinkling of chilli flakes.
🥑🍗Ingredients 🍗🥑
⭐️150g dried pasta (we used penne)
⭐️150g cooked skinless and boneless chicken breast, roughly chopped
⭐️½ small red onion, finely chopped
⭐️2 large peppers (1 green and 1 red), deseeded and roughly chopped
⭐️160g can sweetcorn, drained
⭐️Large handful rocket leaves
⭐️2 tbsp finely chopped fresh parsley or coriander
⭐️4 level tbsp extra-light mayonnaise
⭐️Lime juice (to taste), plus wedges to serve
⭐️1 medium avocado, sliced
⭐️Pinch of dried chilli flakes, to serve
🤩Method 🤩
⭐️Cook the pasta according to the pack instructions.
⭐️At the same time, put the chicken, onion, peppers, sweetcorn, rocket, herbs and mayo in a mixing bowl and gently mix together.
⭐️Drain the pasta, cool under running water and drain again. Stir the pasta through the ingredients in the mixing bowl, add the lime juice and season to taste. Divide between 2 bowls, then divide the avocado between the bowls, sprinkle on the chilli flakes, grind over some black pepper and serve with the lime wedges.
