MEDITERRANEAN TRAY BAKE
Ingredients (Serves 4)

* 600g chicken breasts (diced), tofu for a vegan alternative (not sure on how many grams)
* 2 peppers, chopped
* 1 courgette, sliced
* 1 red onion, sliced
* 250g cherry tomatoes
* 2 tbsp olive oil
* Juice of 1 lemon
* 2 cloves garlic, crushed
* 1 tsp oregano
* Salt and pepper
* 500g baby potatoes

Method

Heat oven to 200°C (180°C fan).
2. Halve the baby potatoes and place on a large baking tray.
3. Add peppers, courgette, onion and tomatoes.
4. Mix olive oil, lemon juice, garlic, oregano, salt and pepper.
5. Pour over vegetables and toss.
6. Place chicken on top and coat with remaining dressing.
7. Bake for 30- 40 minutes until the chicken is cooked through and potatoes are golden.

Lifespan vs Healthspan

Most people focus on living longer.

I’m more interested in helping people live well for longer.

Having worked in retirement villages, I’ve seen that lifespan and healthspan aren’t always the same thing.

Healthspan is the years you spend healthy, active, independent and able to enjoy the things you love.

That’s why all of my classes and coaching come back to my six pillars of wellness:
