What a fabulous day we had with and !

We started the morning with a glorious forage in the spring sunshine followed by a woodland cook up of all the delicious (edible) things we found 🌱😋

- We looked at the difference between the poisonous lords and ladies and sorrel - they were growing right next to each other.
- we foraged for sorrel leaves, ox-eye daisy leaves, sweet cicely leaves and garlic hedge mustard leaves from the garden.
- we met Motherwort and some of us took a few plants home with us.
- we made carrot & nettle and wild garlic-bud kimchi with apple, ginger, orange juice and cinnamon sticks.
- we made a herb and Ayurvedic spice blend, grinding ground ivy and fresh ladies smock into salt and lightly roasting the spices over an open fire to flavour our pre-foraged and leeched acorn burgers.
- we learnt about how Ayurvedic theories assist our digestive fire that, needs amending for different seasons, and what foods are good to eat in early spring.
- we made a wild salad with sorrel, ox-eye daisy leaves, dandelion petals, hawthorn leaves and daisies with a lilac blossom dressing.
- we made a chimmicurri sauce with parsley, sweet marjoram, mint, sweet cicely, lemon juice, red wine vinegar and olive oil.
- being the perfect time of year, we gathered dandelion and wild garlic flower buds with instructions on how to pickle them in ACV at home.
- we drank a spring tea with cleavers, ground Ivy and nettle.

What a wholesome and full day! In so many ways ♥️

Thank you so much to Nina for all your wonderful chef skills and Ayurvedic knowledge and to Alice for making the magic happen 🌱♥️
