Homemade granola is such an easy and delicious way to start the weekend. You can throw in almost any nuts, seeds, oats or grains. Just ensure you bind with quality ingredients including coconut oil or olive oil, maple syrup and any spices of your choice. I’ve used cinnamon and cardamom. You can switch up the oats for another grain, buckwheat and quinoa flakes make a great addition. Remember if adding dried fruit or toasted coconut chips or flakes, toss them in at the end of baking so you don’t end up with chewy shrivelled fruit and burnt coconut 😊

Bake in fan oven 160c for 30 mins, tossing every 10 minutes.

I’m testing vegan and gluten free muffins today. This recipe has a fabulous warming chai flavours of cardamom, cinnamon and cloves combined with the freshness of butternut squash and sweetened with medjool dates. Thank you for the inspiration. So delicious served with cream cheese (or Nush creamy almond spread) whipped with orange zest and maple syrup. A perfect way to brighten up a grey day with a cup of your favourite tea 🤗

SO excited to soon have middle son home from first month of uni that I’ve made him these delicacies using his favourite dates 😍 Medjool dates stuffed with nut butter (I’ve used pistachio cream and peanut butter as variations) dipped into melted dark chocolate and sprinkled with sea salt. I’ve used crushed pistachios and chilli flakes for one and walnuts to top the other. Leave to cool in fridge. Extremely moorish and SO easy to make, super healthy as a sweet treat 😋

Having made a promise to myself and to friends to insta more of my cooking - here’s my Monday morning sunshine Dahl with roasted squash ☀️

Inspired by my Kabocha squash that arrived in this mornings veg box and excess red lentils in my larder, I decided on this delicious fragrant Dahl, which my incredibly talented niece and I devoured for lunch 😋

To cook, simmer a generous amount of thoroughly washed red lentils in some water with grated ginger and garlic, curry leaves, a tin of coconut milk and season. Cook until tender and a preferred consistency. Approx 30 mins.

Meanwhile cut the squash into boats and roast in medium/high oven with coconut oil, season and cook until tender.

Fry some sliced onions in butter and olive oil. Add some cumin, coriander and mustard seeds. Cook until tender and lightly browned.

Blend the squash (for this type of squash I kept the skin on) and stir into the cooked lentils.

Serve the Dahl with some roasted broccoli or veg of choice for a vegan option or delicious with a fried egg for extra protein. Top with the onions, fresh coriander and chopped chilli. Add a squeeze of 🍋‍🟩
We added mango chutney for extra gluttony! 😋
