Here’s what I learned researching probiotics before we left for a year abroad:

Most people never connect what’s happening in their mouth to how they feel in the rest of their body. I didn’t either, until it became my cancer healing story.

When I was going through treatment, one of the first things my integrative team told me was to go see a biological dentist. What’s in your mouth doesn’t stay in your mouth, they said, and they wanted mine looked at right away.

My scan came back covered in black. Infection everywhere. Some of it was coming from root canals I’d had years earlier, including one from an accident in college I hadn’t thought about in over a decade. I had no pain or symptoms. Nothing telling me anything was wrong.

A dead tooth doesn’t hurt, so there’s nothing telling you to deal with it, and it can sit there quietly for years.

Let’s answer this question, ā€œwhy has the US moved so far away from natural, whole foods?ā€ The answer is: convenience.

Since being in Syros, I have been sharing so many of the differences I have noticed between living in the US and living here and food is one of the biggest ones.

In the US we optimize for convenience. Ordering groceries in bulk, restaurants with an insane amount of options, produce available all year round no matter the season.

But when you optimize for convenience, you are compromising quality… that’s the trade.

And here in Greece, it’s different. Everything is seasonal. The menus are limited. They cook around what is actually growing right now instead of trying to have everything available all the time. And because of that, everything just tastes better. šŸ„—
