Pork Knuckle and Ginger Stew (豬腳薑醋) is a highly traditional, nourishing dish from the Southern Chinese region (especially Guangdong, Hong Kong, and Macau). It is slow-cooked and gifted to relatives and friends around the baby’s Full Month (滿月) milestone to announce the birth and share the family’s joy.
What’s the ingredient?
Ginger
In Traditional Chinese Medicine (TCM), ginger is crucial for expelling "wind" (inner dampness/cold) that enters the mother's body during childbirth.
Sweet Black Vinegar
The acidity of the vinegar breaks down the calcium in the pork bones, making it easily absorbable for the mother.
Pork Knuckles/Trotters
They are rich in collagen and gelatin, which help postpartum recovery and promote lactation for breastfeeding.
Boiled eggs
After soaking in the vinegar, the egg whites become wonderfully chewy and the yolks savory.
