Posted • Grilled marinated chicken with crispy Persian cucumbers, the most succulent local tomatos, some creamy feta wedges, green olives, and toasted pine nuts. Top it all with some great olive oil, sea salt, and pepper.

To make The chicken - you can use thighs or breasts. I put the raw chicken in a glass container and add in some olive oil, garlic, Greek yogurt, a little lemon juice, onion, sea salt, pepper, oregano, marinate for 4-6 hours. Then you can grill outside, in a cast iron inside, or even bake.
