Posted • Grilled marinated chicken with crispy Persian cucumbers, the most succulent local tomatos, some creamy feta wedges, green olives, and toasted pine nuts. Top it all with some great olive oil, sea salt, and pepper.

To make The chicken - you can use thighs or breasts. I put the raw chicken in a glass container and add in some olive oil, garlic, Greek yogurt, a little lemon juice, onion, sea salt, pepper, oregano, marinate for 4-6 hours. Then you can grill outside, in a cast iron inside, or even bake.

Ultra juicy, perfectly seasoned chicken thighs, nestled on top of a bed of all of our FAVORITE burrito goodies in a perfect bowl!

There is MAJOR FLAVOR happening here!🔥

4 servings

Ingredients:

For burrito bowl:
1 lb. chicken thighs, boneless skinless
2 Tbsps homemade taco seasoning
2 cups cooked quinoa
2 Tbsp olive oil, or avocado oil, divided
2 bell peppers
1 red onion
1 ripe avocado, chopped
1/4 cup crumbled cotija cheese, or other crumbly cheese
fresh cilantro, to garnish

For corn salsa:
4 Roma tomatoes, chopped
1 cup fresh sweet corn, cut from cobb or frozen organic corn, thawed
1/2 small red onion, finely-diced
2 Tbsp finely-chopped cilantro leaves
1 Tbsp fresh squeezed lime juice
1/4 tsp sea salt

Who here is struggling to get themselves up and into the gym? I know I sure did! Especially when you have a busy life and you are juggling about a thousand things at ONE go...⁣

Going to the gym is a lot harder than you planned it to be… than it used to be maybe too

& that’s OK!

Because I get it things change, plans change and it’s not everyday we are going to be hyped up and thrilled to start breaking a sweat 💦 ⁣

But what if I told you, there was another way. It’s kind of like having your cake and eating it 🍰 ⁣

It’s what has made the biggest difference to me and my life and my body today because of how accessible it is! ⁣

I can work out consistently, getting the motivation I need and constantly build lean muscle to help me burn fat even when I am not working out.⁣

Are you ready to stop making excuses for yourself? You are the only person responsible for your outcome this summer and the way you feel IF you apply yourself.

Truth it your only one decision away from being the person you want to be. I remember times when I used to feel chubby and unhappy with my body and I used to complain and blame everyone for my problems.

“I’m just big boned”

“That body is only for super models and celebrities”

“You have to starve yourself and be miserable to get your dream body”

🛑 All of these are poor excuses i was making for myself because I wasn’t ready and I didn’t have the right information to help cross that bridge from where I was and where I wanted to be…

🤚Honestly there is no such thing as “big boned”
There are only big excuses. I am now giving you the decision to finally make change in your life and to stop being a dreamer and start being a doer.

Crispy Baked Curried Chickpeas bowl
😋 A bowl packed with delicious chickpeas, rice, and veggies! Get the chickpeas recipe below: ​
Recipe
• 400g can chickpeas, drained & rinsed • 1 tsp curry powder
_
1️⃣ preheat oven to 200C/180C fan/400F/gas 6, line a baking tray with non stick baking parchment.
2️⃣ After draining and rinsing the chickpeas, pat them dry with a clean tea towel, then add them to a bowl.
3️⃣ sprinkle in the curry powder and stir until the curry powder has coated all of the chickpeas.
4️⃣ Bake them in the oven for 15 - 20 minutes , turning them over halfway through cooking time!
