Here I go again delving into the imagination of what can happen if the food system breaks down. With the uncertainty of world events, energy costs etc. I am even hearing about food rationing. Imagine if this became a thing again… where would you get your food? Who would cope better?⁠

Shortening the supply chain for organic food is an issue we work around a lot at The Urban Co-op. Is there enough supply and demand for organic? We see ourselves in the middle a lot talking to both sides…. How do you connect both?⁠

Lamb Curry a la Anne is our monthly recipe.⁠

I make a lot of yoghurt at home and often use it as a marinade. I find it so useful to revive frozen meat I have located in the freezer. Not one to waste there are recipes that help to keep things going!⁠

Here is a recipe I am very fond of, not only because it is easy but because it is delicious.⁠

While of course you can amplify flavours with a multitude of spices, this is the simple version that works every time.⁠

This is how I make it.⁠
1 pack of diced lamb⁠
1 500g tub natural yoghurt⁠
1 tblsp sweet curry spice sonnentor⁠
2 onions peeled and sliced.⁠
3 blubs garlic grated⁠
A piece of ginger grated⁠
Ghee⁠
Fresh coriander leaves to garnish⁠

A Morning of Connection & Inspiration⁠

This morning, I had the pleasure of attending the Network Ireland Limerick breakfast at 101. My very first event representing both The Urban Co-Op and Caramellow Productions.⁠

Walking into the room, I didn’t quite know what to expect. But what I found was a space full of inspiring, driven women, all building, creating, and supporting one another.⁠

It was genuinely energising to hear their stories, share ideas, and feel part of such a strong and welcoming community.⁠

A special thank you to Barbara and Danilly, who made me feel instantly at ease.⁠

Moments like this matter. They push you a little outside your comfort zone, but they also expand what feels possible.⁠

A Simple Checkpea Hack is our Zero Waste tip for May⁠

Sometimes the best zero waste ideas come straight from our customers, and this one is too good not to share. One customer told me how she makes the most of a large 2.5kg tin of chickpeas, turning it into a weekly staple with very little waste.⁠

When she gets the tin home, she drains and rinses the chickpeas, then pats them dry. From there, she portions them into freezer bags in sizes she knows she will use. This means she always has ready to go chickpeas on hand, without the risk of any going off in the fridge.⁠

Each week, she takes out a portion to make fresh hummus. It’s quick, easy and far more economical than buying smaller tins or pre made options. It also cuts down on packaging and makes meal prep that bit simpler.⁠

It’s such a practical reminder that buying in bulk can work really well when you have a simple system in place. A little bit of preparation at the start means less waste, more convenience and delicious homemade food throughout the week.⁠

Small habits like this can make a big difference, and we love seeing these ideas shared within our community.⁠
