With all our lovely summer fruits around at the moment, people often don't realise just how volatile vitamin C is. Because it is a water soluble vitamin (and therefore not stored in the body) vitamin C can deteriorate very easily, potentially leaving you with very little or no vitamin C!!

Here's a few tips on protecting vitamin C in your fruits & veg:

1. Prepare just before eating. Cut, peel and slice as close to consumption as possible.

2. Use a sharp knife to cut fruits as even a blunt knife can damage vitamin C.

3. Use lower heat and shorter cooking times and cook in minimal or no water.

4. Store fruits in a cool place, covered and directly out of sunlight.

My guys can't get enough of these! Keep in the fridge for 1 week (if they'll last) or freeze for up to 3 months. Normally these are made with peanut butter, but I wanted to do a nut free version so the oil works well as a substitute. Enjoy 😋

I am ALL about the fibre as I know how beneficial it is for us. It's disappointing to see such a shortfall particularly in our teenagers and adults.

The main thing is trying to build it in where possible and build it up slowly.

Again with anything food related, consistency is key.

🌱 Why do dietitians always talk about eating 30 different plants each week?!

Your body doesn’t just need vegetables… it needs variety 🌈

Different plant foods provide different vitamins, minerals, fibre and antioxidants. If you only eat the same few foods on repeat, you may miss out on important health benefits.

Your gut also loves variety. Different plant fibres feed different “good” bacteria in your gut, which can help with digestion, immunity, energy and long-term health, like fighting chronic diseases. Many experts suggest aiming for around 30 different plant foods per week — and yes, all nuts, seeds, beans, wholegrains, frozen and tinned fruits and vegetables all count 🙌

It doesn’t need to be perfect. Just try to mix things up:
✨ rotate your fruit - fresh, frozen, tinned
✨ include as many different vegetables
✨ add beans, nuts and seeds daily
✨ eat wholegrains 80% of the time

Small changes can make a big difference 🌿

Dieting is not a good place for the body to be. Lots of undesirable effects on the body, some short lived and others that take longer to reverse due to nutritional deficiencies taking place.

NOURISH YOUR BODY. YOUR BODY DESERVES THIS.
