LEFTOVER ROTI → CRISPY HIGH-PROTEIN PANEER WRAP 🌯✨

This easy healthy Indian wrap is perfect for a quick lunch, dinner or post-workout meal—and it’s a delicious way to use leftover roti!

🛒 INGREDIENTS

For the Paneer Bhurji Filling:
• 1 medium leftover roti
• 80 g low-fat paneer, crumbled
• ½ tsp ghee
• 2–3 cloves garlic, chopped
• ½ cup colourful vegetables
– Capsicum
– Carrot
– Sweet corn
• Salt, to taste
• ½ tsp cumin powder
• ½ tsp coriander powder
• ¼ tsp chilli powder
• ¼ tsp black pepper
• ½ tsp chaat masala

For the Wrap:
• Green chutney, as required
• Tomato slices
• Onion slices
• ½ tsp homemade hummus — optional
• ½ slice cheddar cheese
• ½ tsp ghee for toasting/air-frying

👩‍🍳 RECIPE

1️⃣ Heat a pan and add ½ tsp ghee. Add chopped garlic and sauté briefly.

2️⃣ Add around ½ cup chopped vegetables—capsicum, carrot and sweet corn.

3️⃣ Season with salt, cumin powder, coriander powder, chilli powder, black pepper and chaat masala.

4️⃣ Add 80 g crumbled low-fat paneer and mix everything together. Cook briefly until well combined.

5️⃣ Allow the paneer bhurji filling to cool slightly.

6️⃣ Take one medium-sized leftover roti and spread a thin layer of green chutney over it.

7️⃣ Add the paneer bhurji on one half. Top with tomato and onion slices.

8️⃣ Add ½ tsp homemade hummus if using, followed by ½ slice cheddar cheese.

9️⃣ Fold the roti over the filling and lightly grease both sides with approximately ½ tsp ghee.

🔟 Air fryer: Preheat and air-fry at 160°C for around 8 minutes, or until golden and crispy.
Alternatively, toast it on a tawa until crisp on both sides.

✨ RESULT: Crispy outside, creamy and cheesy inside, with a delicious paneer-and-veggie filling!
