Ingredients:
2 large sweet potatoes, peeled and diced
1 can of black beans, drained and rinsed
1 can of kidney beans, drained and rinsed
1 can of pinto beans, drained and rinsed
1 large onion, chopped
3 cloves garlic, minced
1 red bell pepper, chopped
1 can of diced tomatoes
2 cups vegetable broth
2 tbsp chili powder
1 tbsp cumin
1 tsp smoked paprika
Roasted peanuts for garnish
Salt and pepper to taste
Olive oil
Instructions:
Heat olive oil in a large pot over medium heat. Add onions and garlic, sautΓ© until fragrant.
Add red bell pepper and sweet potatoes, cook until they start to soften.
Stir in chili powder, cumin, and smoked paprika. Cook for another minute to release the flavors.
Add mixed beans, diced tomatoes, and vegetable broth. Bring to a boil, then reduce heat and simmer for 30 minutes, or until sweet potatoes are tender.
Season with salt and pepper to taste. Top it with roasted peanuts.
