SUGAR-FREE STEVIA sweetened Kesar SEVAI PUDDING /SIMUI PAYESH /SEVIYAN RECIPE:

Ingredients:
1. 100gm Vermicelli
2. 1lit Full fat /toned milk
3. 30-40gm (5-6 tablespoon full) Standard STEVIA SWEETENER (3 times Sweetener than sugar)
4. ½ -1 Teaspoon Cardamom Powder
5. 2 tablespoon Ghee
6. 3-5 strands Saffron(Optional)
7. 30-40 gm Chopped Cashew, Almond, Pistachios(Optional)

Preparation:
1. Heat the kadai/pan, add ghee and fry the vermicelli with chopped cashew, pistachios & Almond for 2-3 minutes over a low flame.
2. Add Milk in the kadai; and boil the milk with the vermicelli & saffron in the pan for 8-10 minutes or till it thickens and reduces into half over a high flame, continue stirring; do not stop

3. Add 30-40gm (5-6 tablespoon full) Standard Stevia sweetener (3 times Sweetener than sugar) and again boil until get desired consistency on high flame,
4. Then add green cardamom powder, almond and pistachios-small pieces to the pudding, mix them well with the vermicelli and the milk and turn off the flame.

• Note- This is a pudding style recipe. You can make it little soft also by reducing the boiling time after adding stevia sweetener. You also adjust the sweetness according to your taste.

SUGAR-FREE STEVIA sweetened KESAR SHRIKHAND Recipe:

Ingredients:
1. 400gms Green Yogurt
2. 30-40gm (5-6 tablespoon full) Standard Stevia sweetener (3 times Sweetener than sugar)
3. 1/3 - ¼ teaspoon Cardamom Powder
4. 2- 3 pinches of nutmeg powder
5. 1-2 tablespoon full fat/toned milk
6. 12-15 saffron strands
7. Chopped Cashews, almonds, pistachios (optional)

Preparation:
1. In a small bowl, take the milk and warm it in a gas oven. Add a pinch of saffron strands. Stir and keep aside.
2. Then in a mixing bowl take the chilled greek yogurt.
3. Add 30-40gm (5-6 tablespoon full) Standard Stevia sweetener (3 times Sweetener than sugar).
4. With a wired whisk and with brisk round movements, mix stevia sweetener with the yogurt, as well as beat the yogurt until it becomes smooth and without any tiny yogurt granules.
5. You should get a smooth, creamy consistency in the yogurt.
6. Now add the saffron-soaked milk, cardamom powder, and 2 to 3 pinches of nutmeg powder.
7. Mix again very well.
8. Cover the bowl and refrigerate for 30 minutes to a couple of hours.
9. Before serving, sprinkle some sliced or chopped nuts (optional)

SUGAR-FREE STEVIA sweetened Sweet&Spicy PUMPKIN/KADDU SABZI Recipe:

Ingredients:
• 250 gram pumpkin/kaddu
• 4-6 gm(1/1.5 teaspoon) Standard STEVIA SWEETENER(3 times sweetener than Sugar)
• 2 tablespoon mustard oil
• 2 medium onion(sliced)
• 2 green chilli /add more to make spicy
• 1 teaspoon salt or add according to your taste
• 1/2 teaspoon turmeric powder
• 1/2 teaspoon Lal mirch powder
• 1/4 cup water
• 2 tablespoon chopped coriander leaves
• Chopped Cashew nut & Coconut (Optional)

Preparation:
1. Add 2 tablespoon mustard oil in the kadhai then add 2 sliced medium size onion and 2/more finely chopped green chilli. Stir it.
2. Then add in 1 teaspoon salt, 1/2 teaspoon turmeric powder and 1/2 teaspoon Lal mirch. Mix it well and cook it on medium flame.
3. When the onion turns transparent add thinly sliced or medium size chopped kaddu and 1/4 cup water then again mix.
4. Cover and cook it at low flame until the water is dried and the pumpkin is cooked or soft. It would probably take 12-15 minutes to get it cooked.
5. When the water is dried and pumpkin/kaddu is cooked add 4-6 gm (1/1.5 teaspoon) Standard STEVIA SWEETENER (3 times sweetener than Sugar).
6. Mix it well & cook for another 4-5 min to reduce the water content released by Stevia sweetener. Then add 2 tablespoon chopped coriander leaves mix it nicely . Spread Chopped Cashew nut & Coconut (Optional)
7. It’s ready to serve

NOTE: You may increase or decrease the sweetness according to your taste.

SUGAR-FREE STEVIA Sweetened CHOLAR DAL/CHANNA DAL(Bengal Gram Dal) Recipe:
Ingredients:
1 cup Chana Dal (cholar dal / Bengal gram)
1/2 teaspoon Turmeric Powder
2-3gm Standard STEVIA SWEETENER (3 times Sweetener than Sugar)
3 tablespoons sliced Fresh Coconut
4-5 Cashew nuts
1/2 teaspoon Cumin Seeds
A small pinch of Asafoetida (hing),
2 small pieces of Bay Leaf
2-inch piece of Cinnamon
4pcs Cloves
4pcs Green Cardamoms
1 teaspoon grated Ginger
2 Dry Red Chilli
2 Green Chilli, slit vertically
1 tablespoons Oil
1 teaspoon Ghee
1/2 teaspoon Salt or to taste
2.5 cup Water(Pressure cooking)
Preparation:
1. Wash and soak chana dal in water for 30 minutes.
2. Drain water and pressure-cook it with 2-cup water, turmeric powder and 1/2 teaspoon salt in a 3-liter capacity steel pressure cooker for 4-whistles over medium flame.
3. Turn off flame and let it stand for 15-20 minutes to release the pressure.After pressure releases, open the lid and keep cooked dal aside.
4. Heat oil and ghee together in a small pan over low flame. Add sliced coconut, and cashew nuts and shallow fry them until coconut slices turn light brown. Drain excess oil and transfer them to a plate.
5. Add cumin seeds, asafoetida, bay leaf, cinnamon, cloves, cardamoms, grated ginger and dry red chilli in the same pan and sauté for 20-30 seconds.
6. Add cooked dal, slit green chilli, fried coconut slices, and fried cashew nuts.
7. Mix well and cook for 2-3 minutes over medium flame.
8. Add 1/2 cup water and 2-3 gm standard STEVIA SWEETENER(3 times sweetener than sugar)
9. Mix properly and cook until medium thick consistency for approx. 5-6 minutes. Stir in between occasionally to prevent sticking. Taste for salt at this stage and add more if required.
10. Turn off flame and transfer prepared dal to serving bowl. Authentic Bengali cholar dal is ready.

Note: This recipe is mild Spicy & Sweet. You may increase or decrease the sweetness according to your taste.
