On account of World Health Day with the theme " Together for Health, stand with Science", participated in a panel discussion with the learned pathologist Dr Avinash Phadke and dentist and fitness enthusiast Dr Bhushan Lachke on " Obesity and Metabolism, highlighting simple nutrition tips. It was wonderful to see appreciation for caregivers from the health industry. Everyone's role is just as important. Doctors who worked for the cause of senior citizens and for rural health, ambulance driver who helped transport Covid patients for a nominal fee, a nurse who worked to educate patients regarding anaemia, a wardboy who brought smiles on his patients' faces by his funny poems, a medical social worker who found myriad solutions for the needy were some of the awardees. The brain behind this venture was Rachna Baghwe Lachke, whose goal to create health awareness in urban and rural areas to have a healthier world

The original thought was to make Chicken Wings with Gochujang but considering the spice tolerance of my old folks, made Kundapuri Chicken Wings instead. A chicken wing contains 100 calories with skin on and half of it without. The Kundapur masala is a staple of Mangalorean Shetty ( Bunt) cuisine and has coriander seeds, methi, garlic, chillies and peppercorns. It is similar to Bafat masala of Catholics in Mangalore, a city about 100 km from the coastal town of Kundapur. The coconut milk cuts down the spice to make this a lipsmacking and fragrant dish! Best had with a small portion of rice

Thanks to the lockdown we are now making dishes based on what resources we have rather than going out to fetch imgredients for a particular dish. The vegetable box direct from the farmer had a lovely bunch of methi so thought of making Methi Murg,a recipe from the classic book by Jiggs Kalra " Prasad". Though the recipe talks of adding kasoori methi ( dried version) , it gives the option of adding fresh methi as well. These leaves are a good source of soluble fibre galactomannan, which has a positive effect of blood sugar and lipid control. Methi also provides iron and omega 3 fat (the good fat). When a dish is aromatic, flavour bursting and nutritious, it's scored in all aspects in ny opinion!! I am going to grow methi after the lockdown, thanks to the online class on kitchen gardening by !!

Phodni or Tadka is an important aspect of Maharashtrian and other regional cuisines. Not only do they release aromas butthey also contribute to beneficial health benefits! Yes, Indian food has scientific basis! The ghee provides a medium for fat soluble vitamins. The spices burst with the heat to release phytochemicals. What is the tadka you use on a daily basis? I use mustard seeds, turmeric and hing! This lovely masala box belongs to and she used it to make some scrumptious Mangalorean food
