We’ve nailed the classic Paneer Matar recipe but with a CREAMY twist! 🥥🍛

INGREDIENTS:
* 400 g paneer Indian Cottage Cheese
* 🥛 200 ml NJM coconut milk
* 1 onion finely chopped
* 1 tbsp ginger garlic paste
* 70 g tomato puree
* 2 green chilli, chopped
* 2 tbsp oil
* 1/2 Tsp cumin seeds
* 1/2 tsp turmeric powder
* 1 tsp Kashmiri chilli powder
* 1 tsp coriander powder
* 1 tsp cumin powder
* 1 tsp garam masala
* Coriander, chopped
* Salt

INSTRUCTIONS
* Cut the paneer into cubes and keep them aside.
* Heat a pan with oil over a medium-high heat. Once hot, add cumin seeds and let them splutter for few seconds before adding the diced onion and a pinch of salt.
* Cook for 7 min or until the onion has turned golden brown. Then, add the ginger garlic paste and cook for 2-3 minutes. Add the tomato puree and mix well.
* Add salt and the ground spices. Let them cook on low heat for 5 minutes.
* Now add 100 ml water and coconut milk and mix well. Put a lid on the pan and simmer for 10 mins.
* Add the paneer cubes and garam masala. Let this cook for 5 more mins.
* Finish this with fresh coriander leaves.

Takes one ingredient to elevate it to be delicious, creamy and rich 🤩

Banana crepes are really easy to make! They make for the perfect breakfast or brunch. Adding in NJM’s Walnut Milk provides the batter with a nutty and earthy flavour that elevates the taste - always leaving you wanting more! 🥞

What you need
• 1 cup all purpose flour
• 2 tbsp cornstarch
• 1 tbsp sugar
• 1 tsp sea salt
• 200ml NJM Walnut Milk
• 1/3 cup water
• 1 tsp vanilla extra/ vanilla protein powder
• 1 1/2 tbsp baking powder
• 1 sliced banana

Instructions
1. To a large bowl, bring the dry ingredients together and whisk to combine and set aside.
2. To a separate mixing bowl add the vanilla extract, walnut milk and whisk to combine.
3. Add the wet ingredients to the dry ingredients and gently fold everything together. Here, we like adding some cinnamon, nutmeg or chopped walnuts.
4. Heat a non stick pan, and pour the batter into a crepe. Let it cook both sides until browned.
5. Fold into crepe and sprinkle with some sliced banana or toppings of your choice!

We got so many questions about the recipe for this utterly creamy and delicious shiitake mushroom risotto, so here it is!

What you need?
• 1 tbsp olive oil
• 1 large onion diced
• 2 cloves garlic minced
• 3 cups mushrooms diced
• 1 ½ cups Arborio rice
• 3 ¾ cups vegetable stock
• 𝟭 𝗰𝘂𝗽 𝗡𝗝𝗠 𝗢𝗮𝘁 𝗺𝗶𝗹𝗸
• 2 tbsp butter
• Handful of green chillies (if you like)

How to make it?

Heat the olive oil in a large saucepan over a medium heat. Add the onion, garlic and mushrooms, cooking for 5 minutes until the vegetables soften.

Add the Arborio/Carnaroli rice and stir it for a couple of minutes to toast. Now, lower the heat to a medium and begin adding the veggie stock in increments of around ½ cup. Stir continuously until most of the liquid is absorbed before adding more and repeating the process until you use up all of the stock. Altogether, this process should take around 15 minutes.

Stir in NJM’s oat milk, butter and chillies. Continue stirring continuously for a further 2 minutes, before serving on warm plates.

You won’t believe how good it is takes and how easy it is to make 🤌🏽
