IAPEN India ICNC 2024! A clinical nutrition academic feast with engaging talks, hands on sessions, research presentations, industry interaction, networking, reunions, delicious food and lottts of fun! It was also my first time experiencing a nutrition conference from the other side as a volunteer. The effort, perseverance, meticulous thinking, late nights, revisions and discussions that go into planning such a big event makes me feel grateful for all the conferences that I have ever attended. .parab .canday Fatima ma'am, you all made the the entire experience memorable 💖 could not have done it without you ❤️❤️

From thinking that research only meant wearing a white coat and mixing lab chemicals to getting your (totally sans lab chemicals kind ;)) research abstract published in a peer reviewed journal, what a journey it has been! From choosing the topic, to figuring out a way to conduct the study during the pandemic, to holding our hands at each step and pushing us to participate in poster presentations and write papers, we owe everything to you ma'am. Thank you for being the amazing research guide that you are! Thank you ma'am for giving us the opportunity to collaborate with Monash University and always supporting us!

Dearest , I don't know what I would have done without you! Thank you for being the best research partners I could ever ask for. You are the best!

This is just a small milestone. Research fraternity, here we come!

The beetroot love continues. Today's dinner- Beetroot hummus on toast (with fenugreek microgreens) and Broccoli soup🤤 It was as delicious and fancy as it looks. The microgreens have grown rather haphazardly this time😂 It looks like the soil was not letting the sprouts surface. So the sprouts said to the soil-no issues if you are not ready to move aside we'll pick you up, but you can't stop us from touching the sky! That's how nature gives us life lessons. Never give up!

Aromatic Pot Rice 🍲 Loaded with veggies and spices. No protein though :( So served it with some sauteed paneer. You could also add prawns, chicken, boiled eggs or even soy chunks to the curry. One pot meals like these are easy to make, healthy (if made mindfully) and a change from the routine. Ek foodie ko aur kya chahiye? What are your favourite one pot meals?
