Avo love 😍🥑!!
My go-to side with any breakfast. Half an avocado sprinkled with everything bagel seasoning (because it LITERALLY goes with everything) and a squeeze fresh lemon! There is absolutely nothing else this needs and its delicious, nutritive, fresh and takes 1 minute.

Ps - everything bagel seasoning is something I use a lot - its easily available, you can even make your own. Salty, garlicy, seedy, oh my its perfect! 😍

I get tons of questions about avocados so addressing a few:
🥑 indian vs imported: up to you! Try both and see what flavour and texture you prefer.
🥑 store when cut: use within 2 days. My preferred way of storing it is by applying some lemon juice over the exposed avo (helps not to lose colour), wrap well with cling film, refrigerate in an air tight box.
Some people add it in a container with water, i havent tried this.
🥑 if your avo is underripe and you cut it, nothing much you can do to ripen it (in my experience) so cut only when its soft.
🥑 how to know when its ripe: its softish to touch, not too mushy, not too hard. This comes with experience, try and few and you’ll ace it!
🥑 why Avos? Great source of healthy fats. Low carb/low GI & high fiber - great for diabetics. High in vitamins, potassium and antioxidants. Lastly, DELISH and so versatile!

Edamame noodle broth 🍜✨
I love some Asian flavoured hot broths in such weather! To make it healthier, I added a bump of protein in the form of 100% edamame noodles (gluten free). You can add tofu / use any noodles you like. So versatile! This recipe was a quick fix from things I had in my fridge and pantry.

Makes 2 bowls
Recipe:
100g edamame noodles, cooked
5-6 cloves garlic, minced
1 teaspoon ginger paste
1 birds eye chilly finely chopped (optional)
1 stock cube
1 tablespoon oil
1/2 cup shredded red cabbage
1/2 pc red and yellow bell pepper, julienne
1/2 pc carrot, julienne
2 spring onion bulbs
1 tablespoon soy sauce (tamari for gluten free)
1-2 teaspoon vinegar
1-2 teaspoon red chilly flakes
1 teaspoon hoisin sauce (skip for gluten free)
2 tablespoon tomato puree
2 cups water
Cucumber, carrot and red cabbage pickle
1 teaspoon chilly oil
Garnish with chopped spring onion greens

1. Cook the noodles according to instructions. You can use any noodles you like. I have used 100% edamame noodles from
2. Heat oil in a pan and add ginger, garlic, onion.
3. Once cooked add the bell peppers, cabbage and carrot. Sauté few minutes.
4. Add the stock cube, soy sauce, vinegar, chilly flakes, hoisin, tomato puree. Stir and add in the water.
5. Bring to a boil. Once boiling and the vegetables have cooked your broth is ready.
6. Add your noodles to a bowl, top with the broth and picked veggies. Garnish with chilly oil and spring onion greens.
7. The stock cube and soy sauce are pre-seasoned with salt so you mostly wont need to add more.

For the pickle -
Cut thin strips of carrot, cucumber and red cabbage, add to a bowl. Add 2 tablespoons vinegar and a pinch of salt. Cover and keep aside overnight. I usually keep some in the fridge, lasts a week. You can amp up your pickles in so many ways, maybe lets leave this for another post sometime!

Because who doesn’t love a creamy hummus! 😍
Such a simple yet healthy snack and i’m always looking for tea time munchies!!

Whenever we boil chickpeas for any dish, I make sure to keep some extra and whip up some hummus always trying something new with whatever I have at hand. Today I was out of tahini but this hummus was still soooo creamy and delish.

- 1 cup boiled chickpeas
- 1 clove garlic
- 2- 3 T water
- 1 T olive oil + more to drizzle the top
- salt and pepper
- 1/2 lemon squeeze
- 1 ice cube
- 1 tablespoon spicy marinade rub that I had lying in my pantry. You can sub this for any spice mix or seasoning you like - peri peri / paprika / cayenne pepper / pizza seasoning / zataar or nothing at all! Just adjust the quantity.

My spice mix was garlicy (hence only 1 clove garlic) and spicy (hence I didn’t add any chillies / chilly powder). Spice blends also often have added salt so taste and add more if needed!

Blend it all in a mixer. Add a splash of water if its too thick until desired consistency. The ice somehow magically smoothens it up! Top with some spice mix and drizzle some oil.

So many of you asked for this recipe! Asian Pomelo Salad!✨

Its super simple and I made a version with whatever I had at home.
Its a perfect, refreshing start to any Asian meal you’re cooking, lunch or dinner.

1/2 pomelo, peeled
1/2 spring onion, chopped (the bulb as well as the greens)
Pinch of black salt (kala namak)
Handful peanuts - I use roasted & salted ones.

For the dressing:
1 tablespoon light soy sauce (or tamari if you are GF)
1 tablespoon lime juice / vinegar
1 tablespoon imly chutney (I always have some in the fridge for our chaat cravings, I used that itself. Made from imly and gud aka tamarind and jaggery)
1 green chilly chopped (or red thai bird chilly if you have it)
1 teaspoon toasted sesame oil
1/2 teaspoon garlic paste (optional)

Whisk the dressing together, pour over the pomelo and other ingredients. Mix it all.
Refrigerate and let it marinate for an hour. Top with some more peanuts and eat cold

Pesto is the besto!!!!
Pesto is one of my favourites - with pasta - eggs - as a spread - dip, its endlessss! So fresh, herby, garlicy (and for me, creamy!!).

For lunch today was 100% green pea fusilli by
✔️Gluten free
✔️Vegan
✔️Made with 1 single ingredient
✔️High protein

I have shared my simple, pesto recipe in earlier posts! I sometimes add some cream - i prefer a creamy pesto especially with gluten free pasta.

If you’re vegan, to add body and creaminess to your pasta, you can add some cashew cream (soak a handful cashews in hot water for 30 mins, drain and blend it in the mixer. Add a slight bit of water if you need to).

WHOLE WHEAT BANANA BREAD!! I just can’t get enough of baking Banana Bread!
Watch and save the step by step recipe video for this simple, homemade banana bread!

Ingredients:
2.5 bananas mashed
Half banana sliced for garnish
1/2 C sugar (use any, regular, brown, coconut, jaggery)
2-3 T melted butter
1 egg, whisked
1 t baking powder
1 C wholewheat flour
1/4 C milk (any of your choice)
Chopped walnuts 2 T
1/4C + 2T Bean to Buttons chocolate chips

Method:
- Mix sugar, melted butter and egg in a bowl. Add banana and mix.
- Add the baking powder to the flour and whisk
- add the wholewheat flour and milk little by little, alternating them to mix well.
- add the chopped walnuts and chocolate chips and mix
- pour into a baking dish
- bake in a preheated oven (180 degrees) for 30-40 minutes until toothpick comes clean.
- once cool, cut and serve
- refrigerate to store
Tip: if using an OTG, cover the baking dish with foil before putting it inside and remove it at 20 mins. Continue baking uncovered for remaining duration.

CHICKPEA - COCONUT CURRY / STEW.

This curry is delicious, warm and perfect for a rainy day. Bang full of flavour, this one bowl meal just hits the spot with some rice or quinoa. Its light, not too heavy and friendly!

You asked for the - here it is!!

Ingredients:

- 2 tablespoons oil
- 1 onion, finely chopped
- 1 tomato, finely diced
- 1/2 bell pepper, diced
- 1-2 jalapeño chillies, finely chopped (substitute: 2 regular green chillies)
- 6-7 cloves garlic, finely chopped
- 2 cups vegetable broth (substitute: water)
- 1 cup coconut cream or coconut milk
- 1 cup boiled chickpeas
- 1/2 teaspoon garam masala
- 1 teaspoon red chilly powder
- 1/2 teaspoon haldi / turmeric powder
- 1/2 teaspoon coriander powder
- Salt to taste
- Pinch of ground black pepper

Method:

- Add oil to a pot and heat on medium.
- Sautee onions, bell pepper and green chilly until onions are translucent
- Add the garlic, tomatoes, chickpeas and all the spices. Stir well and sauté for a few minutes
- Add the broth / water and bring to boil.
- Once boiling, reduce the heat, cover the pot and let it simmer for a 10 minutes.
- Add the coconut milk and stir well.
- Garnish with coriander leaves and lemon.
- Serve with rice or for a healthier alternative, quinoa!

This is light and on the thinner side. You can adjust the amount of water : coconut milk ratio based on your preference. We don’t like it too thick or heavy!
