Wellness Greetings!

This June at THAC KITCHEN, our theme is "Flourishing".

Just like a garden needs the right soil, light, and consistency to thrive, our body needs vibrant, intentional fuel to reach peak vitality. This is what we know and experience as Health.

THE INTENTION:
"Once you plant the seed of intentionality, your life will begin to flourish." by Lora de Vries.

In the kitchen, "intentionality" is about choosing ingredients that are alive and vibrant - moving away from processed, heavy habits and leaning into the natural rhythm of the season.
Each meal is like a seed - the seed of intentionality. So choose nourishment that supports your cells, digestion, and energy. This is what sets the tone for the day.

THE RHYTHM: Sunshine & Wild Air

Emerson once wrote: "Live in the sunshine, swim in the sea, drink the wild air." (Yes, even amidst the bustling, concrete energy of Mumbai!)

■ Drink the Wild Air:
Take 3 deep breaths or a few moments of conscious, deep breathing before your first bite. It "oxygenates" your system, clears the mental clutter just as coastal breeze clears the city air.

■ Swim in the Sea:
Immerse yourself in the fluid rhythm of the season. Choose a glass of fresh sugarcane juice or coconut water. Pick fresh seasonal coolers over processed drinks.
Let hydration be a part of your daily tide, washing away the stagnation and fatigue of the day.
Bathe your senses in the stillness of a well-hydrated, revitalized body.

■ Live in the Sunshine:
Seek out natural light in the morning. Even a few minutes by a window helps recalibrate your internal clock, preparing your digestive system to receive nourishment with ease.

THE SHARED HEARTBEAT

THE "CASCADE EFFECT"
THAC KITCHEN ANNOUNCEMENT

A cascade effect is when any small action sets off a chain reaction.
Like dominoes, when the first piece falls, it knocks the next and soon the whole line is down.
Which means tiny changes or a small start triggers the next step, which eventually leads to a big end result, often unexpected. It becomes a whole chain reaction.
Both negative or positive.
Be it within our body or in Nature.

IN THE BODY
When we sweat in the April heat,
What we lose is "water", which is actually minerals.
This causes a drop in electrolytes.
This drop makes us feel tired, get headaches, and digestion slows down.
All this causes the body to overheat more...and we feel heavy on one hand and crave for junk another.
One thing leads to the next creating a domino that leads to a crash.

And yet, when we flip it - which we can, by drinking or consuming "living water" with water sufficient fruits and vegetables like cucumbers, gourds or tadgolas, with more salads and less cereals, Minerals get replenished.
Hydration improves.
Energy returns.
Digestion eases.
The body stays cool.
This is a positive cascade.

IN NATURE
A simple action like turning on the stove -
Adds heat to our homes.
As the room gets hotter,
We use more AC/fans,
Using more electricity,
More fossil fuel burn..
Ultimately leading to our Planet warming, and this insane heat wave we are all experiencing.

If we were to Flip this and -
Choose raw, no-fuel meals,
We create less kitchen heat,
Cooler homes,
Less energy used,
Lower footprint,
Earth stays cooler.

A Small choice which creates a big ripple.

That’s why we in the THAC Kitchen say:
“When we reduce the flame in our kitchens, we also help settle the fire in our systems - Body and Larger Body Earth.”

We at the THAC KITCHEN, wind up this year, with the last Menu for April.
We will be shut in May for our own Summer Break.
We will restart the service from 1st June 2025- ready to take on another cycle, another journey.

NOT JUST FISH, HUMAN CELLS SHOAL & SCHOOL TOO!

Fish gang up and group together (Shoaling) and swim in unison (Schooling) for a bunch of reasons from safety in numbers (making it harder for predators to catch them) to it being easier to find food when they are together. More importantly they save energy by swimming in sync, like a big group dance!
Shoaling and Schooling are in essence collective social behaviors, typically used to describe fish.

Guess what...our human cells also shoal & school! There are direct parallels within our own biology.

During an infection, for example, white blood cells gather together at the site of damage, much like a shoal of fish, to deal with the threat. These are our Immune Cells - or Leukocytes

Another example is when a blood vessel is damaged, platelets (which are small cell fragments in the blood) rush to the site and stick together in a loose shoal, releasing signals to attract more platelets to form a clot.

When our skin gets wounded, and tissues need to be repaired, epithelial cells at the edge of the wound do not act alone. They stay attached to each other and move as a synchronized, cohesive, coordinated "sheet" to cover the wound. Cells in front and back align to heal this wound.
They literally school together.

And much like fish, our human cells show such behaviors for -
1. Safety & Survival.- as Cells in a cluster can share nutrients and protect themselves from harsh environments or immune cell attacks.

2. Efficiency: Coordinated or "schooled" movement is more efficient than individual migration for tasks like repairing tissue or creating new ones be it in the case of a tumor or within the embryo.

Shoaling and Schooling is another marvellous example of being "connected by purpose and driven by community".
For both fish and certain human cells.

REDUCE THE FLAME!

Wellness Greetings!

It's the time of year when we are all looking to escape...from the searing sun and the unbearable heaviness of the heat and humidity.

Yet, even as this April sun reaches its peak, within us, a miracle is silently already at work: Sweat!
Sweating is our body’s sophisticated internal cooling system. It is a natural way of temperature balancing. Our very own in-built air conditioner.

Sweating however also leads to a loss of vital minerals and electrolytes. This is what we experience as lethargy, headaches, fatigue and heaviness..all typical summer ailments. When we don’t replenish these, we feel these symptoms- a sign of internal stagnation.

Keeping this in mind, our MENUS for the next 2 weeks, from the THAC KITCHEN looks into how best we can balance our internal temperature- alongside keeping our external footprint light.

■ To keep our body running, we need more than just plain water - We need "Living Water".
These are the minerals found in plenty in water sufficient fruits and vegetables like raw cucumbers, celery, gourds and pumpkins, coconut water - apart from fruits like tadgolas and jamuns.
They act as natural electrolytes which keeps us well hydrated.
■ This is a perfect month to prioritize "No-Fuel" meals as much as possible. By eating more raw, juicy, and sun-ripened foods, we save on gas, reduce wastage, and - most importantly keep our homes and bodies from overheating.
■ When we lose minerals through heat, our digestion can slow down. Ingredients like roots and fruits that have absorbed minerals directly from the soil work wonders. Crunchy, water-dense veggies paired with cooling Dips that require zero cooking time.
■ Notice how juicy and watery foods are in abundance right now. Nature is providing the antidote to the dry heat. By choosing these over dry, processed snacks, we can align our internal biology with the Earth's seasonal rhythm.

ANT BRIDGES & GUT CELLS: Who mirrors whom?

Right within the human body, pretty much like those ants forming a bridge - there lays a network of gut cells - the gut epithelium, which works together like a community, to keep us healthy.

The gut epithelium is a thin, protective layer lining our intestines. It is like a bridge, made up of cells that stick together, linking together in tight junctions to form a strong barrier. This layer helps to absorb nutrients and keeps harmful stuff (like bad bacteria) from getting in. They let the good stuff in, while keeping bad stuff out!

Individual cells play their part of course and yet when they work together, they create this connecting safe passage, working like a bridge between the food we eat and our body's insides.
It is a pretty crucial "gatekeeper" for our health.

No one is bossing them around; they just do their job, driven by purpose and community strength, because they are part of the team.

And like the ants, even our cells are stronger when they work together!
