SAVE this easy summer time salsa for pool days and cookouts 🇺🇸 also get this veggie chopper! It’s so handy

Black Bean Salsa (recipe can be doubled)

1-2 can black beans, rinsed and drained

1 can Rotel or petite diced tomatoes, drained
1 can Mexi corn, drained

1/2 red onion, chopped
Combine veggies and add chopped fresh cilantro, 1 T ground cumin, and squeeze of lime. Mix well and refrigerate.

Serve with Siete chips, also delicious as a side with grilled meat

BUT if you’re wanting to enjoy your meal, not feel bloated and not spike your blood sugar, here are my Tips!

SAVE this Cooking for Two Crockpot recipe 🌶️ Cheesy BBQ Ranch Quesadillas

To a crockpot add:

2 packages boneless, skinless chicken tenderloins OR 3 boneless skinless chicken breasts

Shake on some dry Ranch seasoning. (Or substitute onion powder and garlic powder)

Then top with half the bottle of G Hughes Sugar Free Sweet and Spicy BBQ sauce (or bbq sauce of your choice)

Cook on low for 4-6 hours. Shred with two forks when done.

Heat a skillet with a drizzle of olive oil and a pat of butter. When heated, add two low carb tortillas. Add shredded and cooked bbq chicken and shredded pepper jack cheese. Cook until cheese is melted and tortillas are browned.

Add a side salad 🥗 and enjoy! Makes enough for leftovers too.
