⭐ The perfect caramelized carrots to accompany any roast - try them alongside your Sunday roasts!

⭐ Cook: 40 mins

⭐ Nutrition per serving:

Sugars 13g
Fiber 3g
Protein 2g
Low in salt 0.15g

⭐ Ingredients
1. 500g carrot, peeled and cut into long chunks
2. 50g butter
3. 1 tbsp olive oil
4. 8 red onions, peeled and quartered with root intact
5. 3 sprigs thyme
6. 1 tbsp soft brown sugar
7. 3 tbsp red wine
8. 1 tbsp good-quality balsamic vinegar

⭐ Method

STEP 1

Blanch carrots in a pan of boiling salted water for 3 mins, drain well, then pat dry. In a large pan, melt the butter and oil, then fry the carrots, onions and thyme over a low heat for 30 mins until golden.

STEP 2

Stir in the sugar and red wine and bubble for a few mins to boil off the alcohol. Add the vinegar, then continue to cook until syrupy, about 5 mins. Remove the sprigs of thyme and serve. Make up to 2 days ahead, stored in a covered container. Tip back into a pan and reheat or use a microwave.

"Eggplant Tomato Bake"

Be sure to give this delicious recipe a try!

Ingredients:

-1 eggplant, sliced into 1/2 inch rounds

-1/4 cup grated fat-free Parmesan cheese

-1 tomato, sliced

Directions:

-Preheat oven to 400 degrees F (200 degrees C).

-Spray a cookie sheet with non-stick oil spray. Arrange eggplant rounds on the cookie sheet and sprinkle Parmesan over the eggplant. Layer one slice of tomato on top of each eggplant round. Sprinkle with Parmesan cheese.

-Bake for 10 to 15 minutes.
