Torre keto de calabacín con carne y queso 🥒🧀

Con esta recetas tendrás un plato fácil, alto en proteína y bajo en carbohidratos, ideal para cenar sin sentir pesadez. ¡Lista en 20 minutos y encima queda brutal! 🔥 𝙍𝙚𝙘𝙞𝙥𝙚 𝙗𝙮 , thank you!

📑 𝙄𝙣𝙜𝙧𝙚𝙙𝙞𝙚𝙣𝙩𝙚𝙨:
*Para las bases (tipo panqueques):
2 calabacines (≈ 500 g)
1 huevo
1 ½ cda de crema agria
2–3 cdas de harina de almendra o coco (según consistencia)
Eneldo y cebolla verde picados
1 diente de ajo
Sal al gusto
Aceite para freír

*Para el relleno:
230 g de carne molida de ternera
½ cebolla (en cubitos pequeños)
70 g de nata (20 %)
1 cda de aceite
Sal al gusto

*Para la cobertura:
120 g de mozzarella rallada

🥣 𝙋𝙧𝙚𝙥𝙖𝙧𝙖𝙘𝙞ó𝙣:
*Bases de calabacín:
1. Ralla los calabacines, sala y deja reposar 10 min. Exprime bien el exceso de agua.
2. Mezcla con huevo, crema agria, ajo, hierbas y harina hasta obtener una masa espesa.
3. Fríe 4 discos de 8–10 cm, 2–3 min por lado, hasta dorar.

*Relleno:
1. Sofríe la cebolla en aceite 2 min.
2. Agrega la carne y cocina 3–4 min desmenuzando.
3. Añade sal y nata, cocina 2 min más. Debe quedar jugoso, no líquido.

*Montaje:
1. Alterna: base de calabacín — relleno de carne — un poco de queso.
2. Repite hasta formar una torre y termina con bastante mozzarella arriba.
3. Hornea a 190 °C hasta que el queso quede dorado y burbujeante.
4. Decora con cebolla verde fresca.

Creamy Garlic Spinach Stuffed Mushrooms

These rich, garlicky mushrooms stuffed with creamy spinach and topped with golden, bubbly parmesan are perfect as a summer appetizer or light lunch!

Ingredients (serves 3):
• 3 large button mushrooms or portobellos
• 1/2 tbsp (3 g) dried garlic
• ½ cup (30 g) baby spinach, chopped
• 1 tbsp (4 g) chopped fresh dill
• 1 tbsp (4 g) chopped fresh parsley
• 3 tbsp (45 g) cream cheese
• 1 tbsp (5 g) freshly grated parmesan
• 2 tbsp (15 g) grated mozzarella

Instructions:
1) Gently remove mushroom stems (slice around the base with a knife) and clean caps with a paper towel.
2) In a bowl, mix spinach, dill, parsley, cream cheese, mozzarella, and dried garlic. Season with salt and pepper to taste.
3) Stuff the mushrooms with the mixture.
4) Sprinkle grated parmesan on top.
5) Bake at 375°F (190°C) for 15-20 minutes until golden and bubbly.

Ingredients (2-3 servings):
• Salmon fillet – 500 g (1 lb)
• Cream cheese – 250 g (8 oz)
• Sun-dried tomatoes – 70 g (½ cup, chopped)
• Fresh dill – 1 tbsp (chopped)
• Baby spinach – 30 g (1 cup)
• Shrimp (peeled) – 6-8 pcs
• Capers – 1 tbsp
• Olive oil – 1 tbsp
• Salt, black pepper – to taste

Instructions:
1) Preheat oven to 210°C (410°F).
2) Place salmon in a baking dish, drizzle with olive oil, season with salt and pepper.
3) Mix cream cheese, dill, spinach, sun-dried tomatoes, capers, a pinch of salt, and pepper.
4) Spread mixture evenly over salmon, top with shrimp.
5) Bake for 15-18 minutes until salmon is tender.
