CHARRED BROCCOLI SALAD with DATES, ALMONDS, and CHEDDAR
Broccoli is a good source of fibre and protein, and contains iron, potassium, calcium, selenium and magnesium as well as the vitamins A, C, E, K and a good array of B vitamins including folic acid.
Try this salad. This is a great salad to make ahead of time as it tastes even better with time. It sits, the almonds, dates, and cheddar soak up the flavours of the dressing, a mix of olive oil, vinegar, and honey. The broccoli remains firm as time passes, but it, too, absorbs the dressing, becoming more flavourful.
