HAPPY INTERNATIONAL TEA DAY
🍵 Did you know that almost every tea enjoyed comes from the same plant, the Camellia Sinensis: Black, Oolong, White, Green, Matcha, Pu’erh? Cool huh?! This was new to me back in 2020!
🌿 The degree to which a tea leaf is oxidized (see photo below) is what determins the category of tea the finished leaf will belong to.
• Green Tea (un-oxidized)
• Matcha (fresh buds, un-oxidized, stoneground)
• White Tea (minimally oxidized)
• Oolong Tea (partially oxidized)
• Black Tea (almost fully oxidized)
• Pu’erh Tea (fermented & oxidized)
🌿 Pu’erh is also from the Camellia Sinensis plant, but is different in that it is fermented as well as oxidized. As the tea undergoes controlled fermentation, it also continues to oxidize until the desired flavors are reached.
🌿 Rooibos, on the other hand, is from an African bush and the name itself means “red bush”. However, the rooibos plant has green, needle-like leaves and tiny yellow flowers. When workers pick, bruise, and ferment the leaves to make tea, they turn a reddish color, giving the tea its name.
