Some random photos from my recent trip to Phuket.

No specific sequence, no particular meaning behind them. Just some moments I happened to capture and felt like sharing.

These days, Iโ€™m trying to remind myself to just be more present.

When I'm working, I want to focus on work. When I'm travelling, I want to truly travel. When I'm resting, I want to actually rest.

It's surprisingly easy to be somewhere beautiful but still be mentally somewhere else. Thinking about the next deadline, checking notifications, replying to messages... until the moment quietly slips away.

So this trip was really just about slowing down a little. Enjoying good food, good company, nice views, and also some quiet time with myself.

Sometimes itโ€™s good to pause, catch up with yourself, and ask, โ€œAm I doing okay?โ€

Nothing too deep. Just a small reminder to enjoy the moment while we are in it.

350g chicken thigh or breast, cut into bite-sized pieces
1 tsp Lee K*m Kee Less Salty Soy Sauce
1 tbsp Lee K*m Kee Panda Brand Less Salty Oyster Sauce
1 tsp Lee K*m Kee Pure Sesame Oil
1 tsp grated ginger
Black pepper, to taste
1 apple, sliced into wedges
2 cups cabbage, roughly chopped
1 carrot, sliced
5โ€“6 slices ginger
5 cloves garlic
Spring onion, chilli slices or sesame seeds, for garnish

๐— ๐—ฒ๐˜๐—ต๐—ผ๐—ฑ:
1. Marinate chicken with soy sauce, oyster sauce, sesame oil, grated ginger and black pepper for 10โ€“15 minutes.
2. Layer cabbage at the bottom of the rice cooker, followed by carrot, apple, ginger slices and garlic.
3. Add the marinated chicken on top. No water is needed.
4. Cook using the normal rice cooker function for 25โ€“35 minutes, or until chicken is fully cooked.
5. Let it rest for 5 minutes, then gently mix everything together.
6. Garnish and serve with a mindful portion of rice.

But actually, salt is not the only source.
Sodium can also come from sauces, condiments, marinades, soups, gravies, processed foods, instant foods, snacks, and even meals we eat outside.
The goal is not to fear food or avoid everything. Itโ€™s about being more aware, then making small changes from there.

Ingredients
1 small yam, peeled and cut into chunks
ยฝ chicken, cut into large pieces
2โ€“3 cloves garlic, minced
2 tbsp dried shrimp, rinsed
1 tsp sesame oil
1ยฝ tbsp oyster sauce
1 tbsp light soy sauce
ยผ tsp white pepper
Water, enough to submerge the ingredients
Chopped spring onions
A little cooking oil

๐— ๐—ฒ๐˜๐—ต๐—ผ๐—ฑ
1. Marinate the chicken with sesame oil, oyster sauce, light soy sauce and white pepper for about 30 minutes.
2. mHeat a little oil and sautรฉ the garlic and dried shrimp until golden and fragrant.
3. Add the yam, marinated chicken, garlic and dried shrimp to the rice cooker.
4. Pour in enough water to fully submerge everything.
5. Cook for approximately 40 minutes, or until the chicken is thoroughly cooked and the yam is soft.
6. Remove the chicken temporarily, then mash the yam to your preferred texture.
7. Return the chicken and mix until everything is well coated in the creamy yam gravy.
8. Finish with chopped spring onions and serve warm.

Thereโ€™s something about slowing down that Iโ€™ve come to appreciate more and more.

For me, wellbeing isnโ€™t just about eating well or staying active. Itโ€™s also about taking care of ourselves from the inside out, making space to breathe, and actually giving ourselves permission to pause. We spend so much time chasing the next thing that sometimes we forget to justโ€ฆ live. ๐Ÿ˜…

Really grateful to fresh for creating this little morning of wellness and for having me share something I genuinely enjoy, tea, ingredients, brewing and the simple rituals around them.

It was such a lovely morning of conversations, experimenting with different tea blends, learning about skincare, and taking some time for ourselves. Also, apparently my idea of โ€œwinding downโ€ still involves preparing 20 jars of ingredients and talking non-stop about tea ๐Ÿ˜‚

A little reminder to myself too: not every moment needs to be productive. Sometimes, doing less is exactly what we need.

Hereโ€™s to taking care of ourselves inside and out, slowing down a little, and spending more time living instead of constantly chasing. ๐Ÿค

Every time I step onto a stage, I remind myself that I'm not just sharing recipes.

I'm helping people see that healthy eating doesn't have to be confusing, restrictive, or complicated.

One simple meal. One practical tip. One myth debunked. One small habit at a time.

If someone leaves the session feeling a little more confident in the kitchen or a little less intimidated by nutrition, then I've done my job.

This has always been my mission: to make nutrition practical, evidence-based, and something that fits into real life.

1 cup ecoBrownโ€™s Steam Brown Rice
1.5 cups water (2 cups for softer texture)
250g bok choy, chopped
ยฝ cup edamame
3 cloves garlic, chopped
1/2 cup coriander, chopped
1 tbsp sesame oil
ยฝ tsp salt, or to taste
๐—ฆ๐˜๐—ฒ๐—ฝ๐˜€
1. Rinse rice and cook with 1.5 cups water.
2. Heat sesame oil and sautรฉ garlic + ginger until fragrant.
3. Add edamame, then chopped bok choy.
4. Once the bok choy is wilted, turn off the heat.
5. Toss in chopped coriander.
6. Fluff cooked rice, mix in the vegetables and rest for 5 minutes.
7. Serve and enjoy.

Brown rice doesnโ€™t have to be plain or boring, sometimes itโ€™s just about cooking it in a way that brings out the flavour and texture.
