The cooking oil sitting in your kitchen right now is causing the inflammation that's destroying your joints, your brain, and your arteries.
Vegetable oils, canola oil, and seed oils are labeled as heart healthy, but I've watched them contribute to arthritis, dementia, and heart attacks in thousands of patients. The oil industry has pulled off one of the greatest health frauds in history.
Seed oils include canola, soybean, corn, cottonseed, safflower, sunflower, grapeseed, and rice bran oil. They're in everything. Salad dressings, mayonnaise, restaurant food, packaged snacks, baked goods. They're cheap to produce and have a long shelf life. Food manufacturers love them. Your body doesn't.
These oils are high in omega 6 fatty acids. Your body needs some omega 6, but the ratio of omega 6 to omega 3 should be about 4 to 1. The average American now eats a ratio of 20 to 1 or higher. This massive imbalance drives chronic inflammation throughout your entire body.
The oils themselves go rancid easily. During processing, they're exposed to high heat, light, and chemicals. By the time they reach your kitchen, they're already oxidized. When you cook with them, the oxidation gets worse. You're eating damaged, inflammatory fats that attack your cells from the inside.
I had a 56 year old construction worker who'd developed severe joint pain in his knees, hips, and hands. His doctor said it was just arthritis from age and his physical job. He was taking ibuprofen daily. His wife cooked everything in canola oil because they'd been told it was the healthiest option.
I switched their entire house to cooking with butter, ghee, coconut oil, and avocado oil. I eliminated all packaged foods containing seed oils. He started reading labels obsessively. Within three weeks, his joint pain had decreased noticeably. By two months, he stopped taking ibuprofen completely. His inflammation markers dropped dramatically.
Seed oils damage the mitochondria in your cells. These are the energy factories that keep you alive. When your mitochondria are damaged by oxidized fats, you develop fatigue, brain fog, and accelerated aging. This is why people who eliminate seed oils often report sudden improvements in energy and mental clarity.
Your brain is 60 percent fat. The type of fat you eat becomes part of your brain structure. When you eat damaged seed oils, those damaged fats get incorporated into your brain cells. This contributes to cognitive decline, depression, and neurodegenerative diseases. Your brain needs stable, healthy fats like those from butter, olive oil, and animal fats.
The research showing seed oils are heart healthy is funded by the oil industry. They focus on cholesterol numbers while ignoring inflammation, oxidative stress, and actual heart attack rates. When you look at all cause mortality instead of just cholesterol, seed oils don't look healthy at all.
Replace every seed oil in your kitchen with real fats. Cook with butter, ghee, coconut oil, or avocado oil. Use olive oil for low heat cooking and salads. Eat fatty fish for omega 3s. Avoid restaurants that cook in seed oils, which unfortunately is most of them. Your inflammation will decrease. Your pain will improve. Your brain will work better.
