Digging back into the archives - spot our retired bone broth jars! This recipe was a hit back then and we have no doubt it will be a hit several years later. Enjoy! 👨🏻🍳

Kaffir Lime and Coconut Chicken Drumsticks

1T coconut oil
6-8 chicken drumsticks
Salt
1 can of full fat coconut milk
1 pouch of The Little Bone Broth Company Chicken Broth
2 spring onions chopped
8 kaffir lime leaves shredded
1T coriander shredded
2cm piece of ginger finely grated
2 garlic cloves finely grated
1T fish sauce
Juice of 1 lime
1t chilli flakes
1T corn flour mixed with 1/4c cold water
More spring onion and dried chilli for serving

Method:
-Preheat the oven to 200 degrees
-Season the chicken drumsticks with salt and melt the coconut oil in a large skillet over a high heat.
-Cook the chicken until browned on the outside and remove from the skillet.
-Add remaining ingredients to the skillet and mix thoroughly. Leave to simmer for 5 minutes on a medium heat.
-Add the chicken back into the skillet and place in the oven for 40 minutes turning the chicken half way through.
-Serve with steamed beans and rice.

Note: if you do not have a skillet, this can be made using a large frying pan on the stove and baking dish in the oven.
