Sourdough calzones stuffed with plant based sausage meat, aubergine, onion, brocollii & cream, and a couple of pretty awesome sourdough banana breads.

I have to say - the calzones took a lot longer than I'd anticipated, but we're a lot more tasty than I'd anticipated, so nobody really minded πŸ˜‚

So ... I made something glorious and delicious in the pursuit of no waste and frugality.

In stressful times, you don't need to eat like a peasant πŸ˜‚ and with a bit of creativity, you can also make something your spouse can't wait to eat as soon as they know of its existence 😍

Sourdough vegetarian nacho scrolls - heck yeah!!

Leftover lentil & vegetable nacho mince and some cheese stuffed and rolled in brioche sourdough, topped with homemade courgette salsa, sour cream and cheese, topped with crushed leftover corn chips and baked to golden perfection.

Hope you guys have fun recreating your own versions of this mouth-watering craziness πŸ’š

It's been a time ... but im still baking away, practicing my bagels and loaves (and lots of sweet treats I forget to take pics of), and being an overall sourdough obsessed frugal gewl πŸ₯°

Grades all back from the past semester finally - all A's πŸ₯° so happy to be studying something so close to my heart and that will make a huge impact on the lives of others, and knowing I am on the right track when the grades speak for themselves. No doubt in my mind that this path is the one for me πŸ₯°

Sourdough hot cross buns 😍😍😍

Man, I've been sick as a dog for the past week - escalating from a sore throat and fevers to extreme fatigue, a fibromyalgia flare up and a chalazion blowing my eyelid up like a lovely purple balloon 🎈 πŸ™ƒ

I guess thats what happens when you get next level run down then have a break 🫠

Anyway ... I wanted to make something special and indulgent for comfort and to try and encourage the wellness to return. Here it is - my 1st ever attempt. I should have let them cool longer before doing the cross for neatness, but I couldn't wait - what a messy moo.

I cant wait to go for a walk for some sun and fresh air with my loves later πŸ’• I've only left the house all week to to go the doctors πŸ˜‚

Years ago I used to make this courgette, bacon & egg loaf soooo often in summer when the courgettes come in thick and fast - today I recreated it with next! plant based bacon strips and also snuck a little sourdough in there too (of course) πŸ˜‚

I'm soooo looking forward to a little 2 week study break after the next couple of days β™‘ can't wait for some outdoor exercise, foraging, swimming and bush walks and catching up with friends and family 🩷 In this section of my degree I've been socially MIA for ... some time πŸ˜‚πŸ˜¬

It doesn't get much simpler or fresher ... slow roasted suuuuper ripe tomatoes, courgette, onion, thyme and honey fermented garlic in olive oil 🀀

Blended into a pasta sauce with a little cream and stirred through scissor-cut, fresh made pasta.

It was smelling so good for so many hours, by the time it was serving time I forgot to take a pic till half way through me eating mine - so the end picture is a bit naff πŸ˜‚

When you try a sourdough sandwich loaf recipe out and it doesn't even look real 😍🀀🀎

I wanted to try a more toddler friendly loaf for breakfast toast for wee Violet, and I think she is going to absolutely love this honey wheat sourdough.

I'll still be practicing my big boule beasties but this one I think will be on the regular rotation too.

My last assignment for the term is absolutely kicking my butt time-wise for the next few days, but luckily we have plenty of leftovers to see us through. I did get these soft & pillowy dozen sourdough brioche dinner rolls started early in the day to accompany dinner and for lunches tomorrow - they went down a treat!!
