You wouldn’t pick this as refined sugar free.
This honey & fruit clafoutis is one of those simple, throw-together bakes that somehow feels a bit special. Soft, lightly set, and just sweet enough.
She made this one with apricots, but it works just as well with other stone fruit or berries, whatever’s in season.
She used Airborne Clover Honey for this recipe. It has soft floral notes with a hint of vanilla, which pairs beautifully with fruit.

Honey & Fruit Clafoutis
Ingredients:
• Fruit of choice ( 4 small apricots)
• 4 eggs
• 75g honey
• 250ml milk
• 1 tsp vanilla extract or bean paste
• Zest of 1 lemon
• ½ tsp salt
• 50g flour
• Optional: 15g sliced almonds
Blender Method:
Preheat oven to 170°C.
Lightly grease a baking dish with butter or oil spray.
Slice the fruit and arrange evenly in the dish.
In a blender, add eggs, honey, milk, vanilla, lemon zest, and salt. Blend for around 2 minutes until smooth.
Sift in the flour and blend again for 15–20 seconds until just combined.
Pour the batter over the fruit and smooth if needed.
Bake:
• 30–35 minutes
If using almonds, scatter them over the top about 25 minutes into baking.
Allow to cool for at least 10 minutes before serving.
Finish with a drizzle of honey.
