Healthy Inspirations Coconut Fish Soup – On Plan and So Satisfying

Ingredients
600gm white fish, cut into 5cm pieces
Salt to taste
Juice from 2 limes
2 Tbsp coconut oil
6 cloves garlic, finely minced
1 chilli, finely minced
1 onion, finely chopped
2 red capsicum, thinly sliced
2 tomatoes, cored and chopped
1 cup fish stock
400ml coconut milk
Coriander, finely chopped

Method
In a large bowl, season the fish with salt and pour the lime juice over, toss, and set aside.
Heat oil in a large pan over medium heat. Add garlic, chilli and onion, and sauté until onion is soft and starting to brown.
Add the capsicum and tomatoes and cook until the capsicum is slightly softened. Add the stock and coconut milk, bring to the boil, and then add the fish and lime juice.
Cover and simmer until the fish is cooked through.
Serve and garnish with the coriander.

This one’s a winner 👇
Our Healthy Inspirations Italian Chicken Bake is full of flavour, super satisfying, and best of all… completely on plan.
Meals like this are exactly why you don’t need to feel restricted to get results.

6 serves
Suits Phases 1 to 4
Ingredients
Olive oil
6 chicken thighs and 6 chicken drumsticks, seasoned with salt and pepper
2 red capsicum and
1 large red onion,
both cut into slices
Chopped parsley

SAUCE
1 cup drained pitted olives
500g cherry tomatoes
1/2 cup fresh parsley, chopped
1/3 cup lemon juice
2 Tbsp grain mustard
4 cloves garlic, crushed
Method
Pre-heat oven to 180°C.
Heat oil in a large frypan and cook chicken in batches, turning once, until golden. Transfer to plate.
Add capsicum and onion to frypan and cook for 5 mins or until tender.
Place all sauce ingredients in a bowl and mix.
In a large roasting pan add chicken, capsicum and onion and cover with the sauce.
Cook for 50+ mins or until chicken is cooked through.

Serve with green beans and garnish with parsley.
