Scotland grows the most amazing dandelions. I know because that's where I am at the moment.
These beauties are blooming everywhere in Helensburgh (about 45 minutes out of Glasgow on the West Coast) right now. The locals—who want nothing more than to annihilate them—think I'm nuts for ooh-ing and aah-ing and taking pics. The other day, my lovely mother-in-law had my husband outside plying some kind of spiky garden weapon to rid her lawn of them.
But these plants are truly magnificent. I've never seen them this lush and healthy in New Zealand. Check out the bottom photo with my foot in it for scale.
If it's true that herbs grow where they're most needed, the good folk of Helensburgh could really do with some liver support. Dandelion root is a superb tonic and primo liver herb and the leaves are diuretic; they help the body to excrete excess fluid.
If I could, I'd harvest all these wonderful plants and take them home with me. But with that out of the question, I'll just have to keep boring my in-laws by waxing enthusiastic over the magnificent specimens I see growing here on the roadsides :)
