Part 2 making Tallow. Today we are doing our second render, our first render as you can see has left us with a very soft tallow which means it has high water content and some impurities left in it.

That jelly on the bottom I scraped off was gelatin and the brown was impurities. Once I scraped all that off I melted it all back down for a while and then filtered it and it will go back into the fridge hopefully for a hard tallow tomorrow.

At the end we have a photo of the scraped off impurities and gelatin, then a photo of the pretty much non-existent impurities filtered out after the 2nd render, and then we have our liquid tallow cooling.

Part 1 of rendering my beef fat into Tallow, such a satisfying process. First we over many hours heat the fat to melt it, during this process I used my immersion hand blender off and on to break up the fat for faster melting. I then strained it into a stainless steel bowl through a very fine (new) sheer curtain over a stainless steel strainer, this helps filter out any cooked meat and other impurities. You can see I did this twice that is because I had to split my fat into two batches. At the end of the video you can see what the starting fat looked like, then what product is left after rendering and then the tallow sitting in the fridge to set over night. It then will be rendered again to remove any impurities left and water content.
