Last night’s dinner was a delicious “use up what’s in the fridge” creation and it did not disappoint! Served with some JUICY ribeye 🤩🙌🏼

I roasted up the last of the pumpkin, cauliflower, cherry tomatoes and a tin of chickpeas with a drizzle of olive oil, honey, salt and pepper until everything was golden and caramelised 😍

Then it all came together:
- A bed of fresh lettuce
- The warm roasted veggies and crispy chickpeas
- A sprinkle of sliced almonds, pumpkin seeds, black & white sesame seeds for that extra crunch (and a boost of healthy fats, fibre and plant protein!)
- Finished with my famous honey mustard dressing ✨

Proof that healthy eating doesn’t have to be complicated! It can be colourful, delicious and made with whatever you’ve got on hand! 🥬🍅☺️

Cottage Lane Toasted Turkish bread with Lurpak New Zealand (my genuine 2nd love) and Wattie’s NZ aioli spread on the bottom with avocado + tomato & salt and peps of course 🥑🍅🤩

Hey hey! Will has brought the Four Square in Tapanui - HUGE CONGRATS to him 🙌🏼🥂 and I’ve joined along for the adventure! An amazing wee town with the most gorgeous community. I plan on keeping up with a bit of nutrition, some nursing at the local medical centre, and obviously helping run the supermarket down here in the cold! 🥶
Sad to have gone from my lovely customers up in Ravenswood but this is certainly an exciting new adventure for both Will and I! 🤍
