Chocolate Coconut Protein Balls

Makes: 12 balls

Ingredients
1 cup desiccated coconut
½ cup chocolate protein powder (vanilla works too)
2 tbsp unsweetened cocoa powder
¼ cup almond meal
2 tbsp lite cream cheese, softened
2 tbsp lite coconut cream or lite coconut milk
1 tbsp sugar-free maple syrup
1 tsp vanilla essence or coffee essence
Pinch of salt
Method
Combine coconut, protein powder, cocoa, almond meal, and salt in a bowl.
Add cream cheese, coconut cream, vanilla, and syrup.
Mix until a dough forms. If too dry, add a little more lite coconut cream; if too wet, add extra coconut.
Roll into 12 balls.
Refrigerate for at least 30 minutes before serving.
Nutrition (Approx. per ball)
Calories: 90–100
Protein: 5–6g
Carbohydrates: 2–3g net carbs
Fat: 6–7g
Extra Chocolate Version

For a richer chocolate flavour, stir through:

1–2 tbsp sugar-free chocolate chips, or
20g finely chopped 85–90% dark chocolate.
Optional Coatings
Extra desiccated coconut
Cocoa powder
Finely chopped toasted almonds

High Protein Low Carb Dessert Ideas:

Berry Cheesecake Lite Cottage Cheese Bowl -
Ingredients

1 cup lite cottage cheese
½ cup strawberries, blueberries, or raspberries - frozen is fine
1–2 tsp sugar free maple syrup or Jok n Al sugar free sauce
½ tsp vanilla
2 x Crushed oreos or GF crackers or Biscoff crackers

Blend the cottage cheese until smooth (or leave it chunky if you prefer).
Stir in vanilla and syrup or sauce
Top with berries and cracker crumbs.

YUM!

Other Easy Cottage Cheese Desserts:

Chocolate mousse: Blend lite cottage cheese, cocoa powder, and sweetener.

Peach cobbler bowl: Lite cottage cheese + peaches in juice + cinnamon + grain free granola or crushed GF bisc

Banana Creme: Blend lite cottage cheese, small banana, vanilla, and a splash of unsweetened nut milk.

Thick cucumber slices
Small piece of smoked salmon
Dill and lemon zest

2. Cherry Tomato Cups

Approx. 15 calories each

Cherry tomatoes, halved and hollowed
Fill with herbed cottage cheese or dairy-free cream cheese
Sprinkle with chives

3. Prawn & Cucumber Canapés

Approx. 20 calories each

Cucumber rounds
Cooked prawn
Tiny dollop of light mayonnaise
Fresh parsley

4. Endive Boats

Approx. 20–30 calories each

Endive leaves
Diced apple and celery
Lemon juice and pepper

5. Roast Beef Roll-Ups

Approx. 30 calories each

Thin slice roast beef
Rocket leaf
Dijon mustard
Roll and secure with a cocktail stick

6. Zucchini Rounds with Salsa

Approx. 15 calories each

Grilled zucchini slices
Spoonful of fresh tomato salsa
Basil leaf

Food prep...is key.
I have worked face to face with Sam for sometime and had some phenomenal results with her physique goals based on body building comps and feeling better in her own skin.
Last year she moved to Western Australia and has struggled to stay on a nutrition path. Her training is always on point. Sam's scale weight climbed to an uncomfortable spot...she reached put recently regards some online nutrition work and BAM!!! Straight into a great regime, planning, prepping on a build your own format.
Awsome job Sam. Love your positive energy x
