Chocolate Coconut Protein Balls
Makes: 12 balls
Ingredients
1 cup desiccated coconut
½ cup chocolate protein powder (vanilla works too)
2 tbsp unsweetened cocoa powder
¼ cup almond meal
2 tbsp lite cream cheese, softened
2 tbsp lite coconut cream or lite coconut milk
1 tbsp sugar-free maple syrup
1 tsp vanilla essence or coffee essence
Pinch of salt
Method
Combine coconut, protein powder, cocoa, almond meal, and salt in a bowl.
Add cream cheese, coconut cream, vanilla, and syrup.
Mix until a dough forms. If too dry, add a little more lite coconut cream; if too wet, add extra coconut.
Roll into 12 balls.
Refrigerate for at least 30 minutes before serving.

Extra Chocolate Version
For a richer chocolate flavour, stir through:
1–2 tbsp sugar-free chocolate chips, or
20g finely chopped 85–90% dark chocolate.
