I was reminded yesterday of how much nature heals us. I love to go shopping. Getting dressed up, going out for coffee, it's something to look forward to. But as my family knows, I like the idea of it more than being in town shopping. I can put up with about 2 hours of shopping before I start feeling a bit agitated and need to go home. The busyness, the people, the noise, the bright lights just all get too much. As we head home 30 minutes away and begin to see green paddocks, animals, wide spaces and mountains I feel like I can breathe again. I get the same feeling going for a nature walk, time at the beach or at a park. Being in a natural environment calms me, centre's me and rejuvenates me. So healing.

I'm a country girl and nature lover. I believe we can learn so much just by observing our natural environment. Dieticians and nutritionists rely on studies and what happens in the laboratory. There is a huge disconnect between what is real and what is not. On the subject of oxalates, the professionals will tell you to go eat your spinach. Me on the other side have observed how bugs avoid those foods high in oxalates. There is a reason for that. Plants have defense chemicals in them. Bugs know that if they eat them they will die or get sick. We need to learn from nature.

Many people disregard the danger of oxalates. They think that they won't affect them. Maybe they've been eating high oxalate veges like spinach, beetroot and kumara for years, along with regular amounts of chocolate. They feel fine. But the reality is if you are human oxalates will affect you at some point. Aching joints as you get older, cataracts, cancer, gut issues and the list goes on. We all benefit from reducing and eliminating these very high oxalate foods.

Do you know some of the most toxic veges you can eat is silverbeet (chard) and spinach. They are extremely high in oxalates, an antinutrient. Our bodies can deal with just a small amount of oxalates but the amount in these two veges is sky high. The oxalate not digested gets stored in our bodies. Oxalate is like shards of glass or crystals. Pointy, sharp and painful. Where does the oxalate go? Often to a previous site of injury, your weakest point. But really anywhere. Oxalate damages our kidneys, our joints, our thyroid, breasts, brain, skin, feet... These veges should be avoided. They are so dangerous in our body.

I like to think of a cold as nature's way of expelling toxins from our body. My body was toxic from many years of wrong eating, medications etc. I've been supporting my body with rest, sunshine, extra high fat foods like butter, drinking lots of meat stock and iodine.

Can food reverse dementia and Alzheimer’s?

Yes it can!

It did for Melissa! And it did In only 5 months 💪

Melissa was a patient at an assisted living home in Phoenix, Arizona that exclusively makes my recipes for their residents. I was recently able to meet her and cook for her at an event for Equip Foods ❤️ I feel blessed to be a part of her healing 🙏🏻

“5 months ago we started our assisted living resident Melissa on a journey to restore her memory.

We gave her a cognitive impairment test called SLUMS to baseline her. She scored a 15/30. Well within the range saying she had Dementia.

Then we fed her Maria Emmerich’s recipes and gave her a bunch of other non-pharmaceutical therapies.

After 4 months, she scored a 22/30 which indicates mild cognitive impairment.

After 5 months, she scored a 28. She’s in the normal range!

It only took months and she was able to move back home to live on her own! We couldn’t be more excited. We celebrated with a going away party and instead of cake gave her a steak.

Fruit. Should we be eating it or not? The choice is always yours. Many cope well with low carb fruits like berries. But for some of us the answer is no to fruit. Last year I cut fruit out and lost 6kg. Fruit is sugar. Yes it's in a natural form and much better than a packet of jelly beans. But our body still thinks fruit is sugar. It is a sweet treat. Try going without fruit and see what happens.
