The Beef & Marination:
300g Beef tenderloin or ribeye, cut into bite-sized cubes
2 tbsp Worcestershire sauce
1 tbsp Liquid seasoning (or light soy sauce)
1 tbsp Oyster sauce
1/2 tsp Black pepper, freshly cracked
1 head of Garlic (separate into half crushed for marinade, half sliced thin for chips)
The Sear & Base:
2 tbsp Butter (divided)
1 tbsp Olive oil (or cooking oil)
2 cups Cooked brown rice (preferably chilled or day-old for a better toss)
Optional side: Blanched corn kernels and cubed carrots
๐ฉโ๐ณ Easy Step-by-Step Guide:
The Quick Marinade: Combine your beef cubes, Worcestershire sauce, liquid seasoning, oyster sauce, cracked black pepper, and the crushed garlic in a bowl. Mix well and let it marinate for at least 15โ20 minutes while you prep your sides.
Crispy Garlic Topping: In a cold pan, add the olive oil and thin slices of garlic. Turn the heat to low and fry slowly until beautifully golden brown and crispy. Remove the garlic chips immediately and set them aside (leave that fragrant garlic oil in the pan!).
The High-Heat Sear: Turn the heat up to high until the garlic oil is smoking hot. Discard the crushed garlic pieces from the marinade, then add the beef cubes into the pan in a single layer. Don't stir immediately! Let it sear for 1โ2 minutes to lock in the juices and get that beautiful, glossy dark crust.
The Glaze: Flip the beef pieces over, toss quickly for another minute, then drop in your marinade liquid and 1 tablespoon of butter. Stir rapidly until the sauce reduces into a thick, glistening glaze coating the beef. Remove the beef from the pan so it stays incredibly juicy and tender.
The Brown Rice Toss: Lower the heat to medium. Drop the remaining 1 tablespoon of butter right into the same pan to pick up all those rich, caramelized savory pan-drippings. Toss your cooked brown rice into the pan, stirring constantly until every grain is fragrant, warm, and coated.
Assemble and Serve: Scoop your savory brown rice into a deep bowl, pile the glistening beef salpicao right on top, and add a colorful side of sweet corn and carrots. Finish it off with a mountain of those crispy golden garlic chips you made in Step 2!
