is a classic Filipino comfort dish made with chicken simmered in tomato sauce with potatoes, carrots, bell peppers, and peas.
Ingredients
2 lbs chicken, cut into serving pieces
2 tbsp oil
4 cloves garlic, minced
1 onion, chopped
2 tomatoes, chopped (or 1 cup tomato sauce)
1 cup tomato sauce
1 cup water or chicken broth
2 potatoes, cubed
1 carrot, sliced
1 bell pepper, sliced
½ cup green peas
2 tbsp fish sauce or salt to taste
Ground black pepper
Optional: bay leaf, hotdogs, or liver spread for extra richness
Instructions
1. Heat oil and sauté garlic and onion until fragrant.
2. Add chicken and cook until lightly browned.
3. Stir in tomatoes and tomato sauce.
4. Pour in water or broth, then simmer for 25–30 minutes.
5. Add potatoes and carrots; cook until tender.
6. Add bell peppers and peas; simmer another 5 minutes.
7. Season with fish sauce, salt, and pepper.
8. Serve hot with steamed rice.
Tips
For a richer flavor, marinate the chicken in soy sauce and calamansi first.
