And just like that, Nathan's Chicken Lunch Bowl is now three weeks old. More weeks ahead. :-)

About three months ago, I had a considerable health scare that forced me to defer my professional plans. I was suddenly confronted with the reality of my own mortality. I had a toddler that needed an able father. I had a wife that needed an able partner. I had plans yet to be fleshed out. I decided to embark on a year-long plan to re-orient my mind and body to adapt to a healthier paradigm. The first phase was to refocus my diet. And that is essentially where the idea for Nathan's Chicken Lunch Bowl came from. That is what I want to share with all of you. I have since lost about fifteen pounds on a careful diet plan. There are still hits and misses. But the focus remains.
