Our story started out of the need to provide fresh nutritious meals for my 2-year old son during the Coronavirus lockdown. Cebu City is the epicenter of Covid-19 cases in the Philippines, which is why it was becoming harder to source nutritious food for my toddler. I started to grow microgreens from our home, starting with sunflower microgreens and pea shoots.
Microgreens are nutrient dense food, packed with vitamins and minerals. They are grown until 10 to 14 days, which is why they are tender, crisp, and have a milder taste than their mature counterparts. Because they are still young, the cell walls of microgreens are not as tough as their adult versions. This makes the nutrients and vitamins easily absorbed by your body. For children, this makes sure that they are able to digest the microgreens as fast as possible.
Microgreens can be eaten raw or cooked. If cooked, make sure to add it at the very last minute prior to serving in order to preserve the vitamins and minerals.
You can add microgreens to soups, pizza, burrito, sandwiches, and any dish you can think of. For pregnant women, microgreens are a good option as they can deliver concentrated micronutrients to your babies. Microgreens are usually high in folate, which helps in the brain development.
