Halloumi and Five Bean Salad

Makes 2 Approx 30g of protein and 10g of fibre each serving
💫Bag of mixed salad leaves
💫2 cooked sweet potatoes (chopped into cubes and airfry for 20 mins) season in S&P with EVOO
💫Tin of mixed beans
💫Slice and fry up a halloumi block
💫8 cherry tomatoes
💫 half a cucumber diced
💫 then whatever you else you like to add into your salads

Assemble and use you fav dressing. I usually make my own but today I used all dressed up!

Remember don’t deprive yourself of carbs just before your period as the drop in your hormones in progesterone, oestrogen and serotonin, makes you seek foods that bring you happiness. But we also burn more calories in this time and therefore seek energy that is quick. Nothing wrong eating your favs but not if it makes your symptoms worse around this time!

That’s why it’s part of our wind down routine. Even as a nutritionist, I find it hard to get enough magnesium rich foods into my kids’ diets so that’s why I’ve used Magnesium kids’ bath salts and lotion to support their levels and bring calm to our bedtimes 🧡

Almond croissant baked oats 💫

200g of oats
50g of ground almonds
2 mashed bananas or 2 apples stewed
2 eggs whisked with 400mls of milk
1 tsp almond extract
Scoop of protein powder (optional)
2 tbsp of flaxseed powder
1 scoop or tsp of prebiotic powder (optional)
Add and combine well in a bowl, and then add 2 tbsp of almond butter swirled on top with a handful of flaked almonds.

I served with Greek yoghurt and a blueberry compote 🫐
