Nothing beats a spicy tomato stew on a cold afternoon.

Look fancy but ridiculously simple healthyish comfort food prepared under 20 minutes

Peel skin of fresh tomatoes, crushing it by hands or blender

Heat up saucepan, add in oil and finely chop onions and season with salt. Cook till onion soften and add garlic. Once garlic turns brown on the edges, drizzle in red pepper flakes and rosemary. Stir continuously till fragrant.

Add in chickpeas, greenpeas & crushed tomatoes. Cook till thicken.

In another saucepan, heat up water till boil, add in drops of olive oil and cook pasta till Al dente. Drain out pasta with a colander.

Mix pasta with the tomato broth, add in parsley and stir.

Divide pasta into serving bowl, drizzle in olive oil, cherry tomatoes ,black pepper and cheese for the final touch.

A good substitute for chixpeas are chilli beans and black beans.

I add in grilled eggplant cus it was a hit item for the last few days.
