Yogurt for sale!
Set up a yogurt station this morning. I placed frozen mixed berries, melon, kiwi, pistachios, sunflower and pumpkin seeds and soaked chia seeds in a muffin tin.

I used to pretend I’m a canteen vendor and ‘sell’ food to the kiddos to help them practice math in preparation for school.

This morning, I decided to surprise them. My customers couldn’t decide on which toppings they wanted, so they got all of them. Each topping is priced at $1, with the yogurt being FOC. 😁 The little one said she had no money, so she paid me with a correction tape. 🤣

Weekend brunch

🌟Thick grilled cheese sourdough toast, scrambled eggs, lettuce, cherry tomatoes, smoked salmon.

🌟Cheese bagel with cottage cheese, lettuce, cherry tomatoes, smoked salmon and toasted panko bread crumbs. For some reason, mei mei wanted panko bread crumbs so she toasted them.

Ending the meal with fruit bowls. Dragonfruit bowl with mango, dragonfruit and kiwi.

When the weather is too hot and you want a light and simple meal….

I made soba noodle salad for lunch cos minimal cooking! I only had to cook the soba which took about 5 mins and soaking the frozen edamame in hot water for about 3 mins.

How to:
🌟 Prepare salad dressing by grating ginger and garlic into a small bowl. Add light soya sauce, rice vinegar, lemon/lime juice, sesame oil and olive oil.
🌟 Prep your vegetables and add them into a big bowl. (By using a bigger bowl, it is easier to toss and mix everything later.)
What I used today: Cucumber, red bell pepper, carrot, cabbage and edamame.

🌟 Cook soba noodles according to package. Drain and rinse well a few times.
🌟 Add soba noodles into the big bowl of vegetables, pour the dressing and toss to mix everything well.
🌟 Serve and enjoy! I added some broccoli and alfalfa sprouts today. You can top with some toasted sesame seeds!

If you want to add more ingredients, you can also add tofu, mushrooms, meat etc. whatever you desire lah but of course more cooking will then be required. I added some shredded chicken (since I have some in the fridge) to one portion and the other two portions remain meatless.

Simple easy lunch ideas 💡

1. Japanese rice topped with natto, spring onions, an egg and kimchi
2. Japanese rice topped with natto, spring onions, roasted broccoli and an egg
3. Japanese rice topped with kimchi + egg drop soup

Minimal cooking required!

I cooked a batch of rice, portion it and store in the fridge. When needed, I just heat up one portion and prep the rest of the ingredients.

Till this day, I’m still surprised at how much she likes natto. She has also been enjoying the homemade kimchi. Yes, someone has a higher spice tolerance now!

Pinakbet for dinner 💖
My favourite Filipino dish!

Pinakbet (my version)
🌟 Pan fry pork belly slices till golden (remove half portion)
🌟 Add sliced onions, chopped garlic and stir fry still fragrant
🌟 Add chopped tomato and bagoong (shrimp paste), mix well
🌟 Add water, cover and simmer for about 5 mins
🌟 Add chopped pumpkin, cover and simmer for about 5-6 mins
🌟 Add lady finger aka okra and french beans, cover and simmer for another 5 more minutes
🌟 Taste and adjust seasoning if needed
🌟 Add the reserved half portion pork belly slices
🌟 Serve and enjoy!

I did not add bitter gourd and brinjal today but it is still very satisfying! Kids love this dish too!

I have been cooking this for years now. Quick and easy meal!

🌟 Add dashi soup pack and kombu to a pot of water and bring it to a boil. Lower heat and let it simmer for about 10 mins. (I like to use my wok cos bigger surface area, easier to move things around and takes lesser time to cook.)
🌟 Cut ingredients of your choice (I always use cabbage, carrot, mushrooms and tofu)
🌟 Rehydrate dried wakame in a bowl of water
🌟 Add carrots and cook for a few mins before adding cabbage and mushrooms
🌟 Add meat if you like (I like to use thinly sliced meat since it cooks really fast)
🌟 Once meat is no longer pink, add tofu and let it warm up for about a min.
🌟 Add some miso in serving bowl, transfer ingredients and soup in bowl
🌟 Top with rehydrated and drained wakame
🌟 Mix miso into soup before enjoying

I always make a dipping sauce to go with this dish. I add an equal portion of light soya sauce and vinegar in a separate bowl. We love dipping the meat in the sauce, so good!
