It’s amazing how many types of food allergies we encountered in the last few days. We have groups of European guests who are vegetarian and allergic of gluten, cow milk, and bell pepper etc. to join our breakfast and dinner buffet. Almost 80% of cooking ingredients and sauces are consist of wheat…..?

It’s our big challenge to provide the right food to all in our buffet line. We learnt from our experiment that we can replace the wheat flour with corn flour and oat milk for cow milk allergic person. Fish sauce doesn’t contain wheat while oysters sauce and soya sauce aren’t gluten free.
