It’s not the sound of machines or men. It’s bees. Thousands of them. Guardians of a treasure both sweet and dangerous — the legendary deli bal, Turkey’s “mad honey.”

The Keeper of the Mad Honey

In a rickety wooden hut balanced on metal stilts above a sea of rhododendrons, beekeeper Hasan Kutluata works with the calm of a monk and the precision of a surgeon. Smoke curls from his pinewood-filled bellows, cloaking him in a soft veil that soothes his bees. His hands are bare — unafraid. Hasan is the third generation in a family that has risked stings, storms, and bears to harvest one of nature’s strangest delicacies.

When he cracks open the hive, the air thickens with the scent of resin and nectar. The honey that drips from the combs glows a deep, molten red — darker than amber, heavier than gold. This is deli bal: honey made from the nectar of wild rhododendrons whose petals conceal a neurotoxin called grayanotoxin. A single spoonful can slow the heart, send the mind spinning, or — in the right measure — induce a euphoric calm that ancient healers swore could cure pain, boost passion, and sharpen perception.

A Honey That Toppled Armies

Hasan grins as he hands over a wooden spoon loaded with the shimmering syrup. It’s bitter at first — medicinal, floral, electric. Then comes the heat in the throat, the subtle vertigo that hints at why this honey once changed the course of history. In the 4th century BCE, Greek soldiers marching through these same hills devoured it by the jarful. Hours later, Xenophon wrote, they lay sprawled on the ground “like men overcome by madness.” The bees of the Black Sea had defeated an army.

For centuries, it was called the nectar of the gods. Rich in antioxidants, polyphenols, flavonoids, and proline, Deli Bal honey dates back to the 17th century B.C. Colchis Empire. Ancient Laz Tribes used it to cure diseases, boost immunity, fight aging, and as an aphrodisiac.

Cultivated high in the untouched mountains of Arhavi and produced by a colony of Caucasian wild bees that pollinate from medicinal, endemic herbs and plants, the majority of Deli Bal honey’s annual production is reserved for pharmaceutical companies. The D3li Bal honey name translates as “Mad Honey” and is a legendary, ancient nickname for the densest, highest, and most magical honey harvested in the northeast Black Sea.

Mad honey, aka Deli Bal Honey, originated in the Black Sea region, Eastern of Turkey. For this, bees collect nectar from Rhododendron flowers. The nectar of some flowers contains a natural neurotoxin called Grayanotoxin.

Beekeeping in Turkey : How To Make Sweet, Golden Honey



The Pure Caucasian Queen Bee of Maçahel

Maral is part of the Maçahel province, of which half  is in Turkey and the other half in Georgia.  In 1998, scientists wanted to know why  Maçahel was producing more and better quality honey than other regions. The answer was because the bees are pure Caucasian.

The Caucasian queen bee in particular has a longer proboscis, used to gather nectar from the plants. It also works harder than other breeds. Combine these facts with natural plants and flowers that are in abundance in Maçahel, and you have the perfect business model to create and sell top quality honey and generate employment in local communities. So the Tema project started

This beekeeper bought a queen bee from the Tema project, who help to produce more of the breed by artificially inseminating bees in a laboratory with the pure Caucasian gene. He placed her in a small box within the hive as rejection can sometimes be an issue. In between the bees and the queen bee was a small piece of cake. Over time, the cake was eaten away and the relationship between the queen and the workers grew. She was accepted and released into the hive to start work.
