In previous winters I've always kept a jar of this going in my fridge, but this time I forgot to do it in time to catch this cold. But I'm ready now, and I want to help others. Consider it another Public Service Announcement. :) This stuff really works.

Boil water.

While water is boiling, mix the lemon, ginger and honey in the jar. Scoop out 1 tablespoon of liquid mixture and place into a mug and then pour the boiling water over top. I always add a couple of slices of lemon from the jar into my tea (I love lemon tea). And drink. This is my drink every night before bedtime.

Welcome to the Bee Hotel

This remarkable structure can be found in Place des Jardins in Paris and is known as a bee hotel. You may be wondering what bees need a hotel for, when they make their own hives. The truth is that many species of bees are solitary – the do not live in hives but instead construct their own nest. The main reason for this is because in these species every female is fertile and this would not make for comfortable communal living in a hive.

Beekeeping Hive From Ancient Times

If you watched Russell Crowe's version of Robin Hood a few years ago, you might have noticed that Friar Tuck kept bees in baskets shaped like large bells. These ancient beekeeping hives were called skeps and were the most popular housing for bees for centuries.

Visually, the skep looks appealing, but this form of ancient beekeeping is rarely used today because it is so impractical. With a skep, there is no way to visually inspect your bees on a regular basis to make certain they are healthy, a must for the professional beekeeper.

Also, with the skep, you are unable to harvest honey without destroying both the bees and their comb, meaning you would have to collect new swarms each spring. These days our bees are simply too valuable to be housed this way.

Slow Cooked Turkey Leg with Honey Glaze & Garlic

Ingredients:

* 2 lbs (900g) turkey leg
* 1 teaspoon salt
* 1 teaspoon fresh cracked pepper
* 1 tablespoon dried thyme
* 2-3 bay leaves
* 1 tablespoon Sriracha, or 1 teaspoon cayenne powder (optional) 8-10 cloves garlic
* 2 tablespoons olive oil
* 3 medium onions, cut into wedges
* 2 tablespoons raw honey
* 2/3 cup (150ml) chicken stock

Instructions:

1. Preheat your oven to 370°F (190°C). Season turkey leg with salt and pepper. Heat a heavy-bottomed, oven-proof casserole with oil over high heat, brown the leg for 3 minutes on each side. Then add onions, garlic, Sriracha, honey and thyme; cook for 2 minutes stirring gently and deglaze with chicken stock. Add the bay leaves.
2. Cover and cook in the preheated oven for 4-5 hours at 370°F (190°C)—or lower 305°F (150°C) for 6-8 hours. Baste regularly with the cooking juices. At the end of cooking, adjust seasoning if needed but there should be enough salt given the chicken stock is reduced.
3. When the turkey meat falls apart easily, transfer to a serving platter and shred with two forks. Enjoy on sandwiches, with a baked potato, white rice, or however else you want to enjoy it. Note: Leftovers should be kept in an airtight container in the refrigerator or freezer.
