I planned to post this last night, but Mother’s Day weekend had other plans. 😂

I came home late Monday evening from a trip to Florida with my daughter. It has been non-stop since then. I will be posting May's menu as soon as I have a few moments to settle my brain. I have a few different menus I will be releasing a little at a time. In the mean time, my Half Sheet Pans are available to order. Get ahead of Mother's Day, Father's Day, Graduation, Birthdays, Showers, or just order for your family to make life easier on any given Tuesday.

Want to know what it took to complete all 7 Meals by Jen April meals for my family?

Here’s the “extra stuff” list:

half and half, sour cream, butter, cheddar cheese, parmesan cheese, pre-cut cauliflower, baby spinach, avocado, potatoes, orzo, precooked rice packets, brown rice, tortillas, can of french onion soup, frozen broccoli, frozen green beans, frozen carrots.

I had seasonings and oils on hand.

For 7 meals, that’s really not bad.

So if you’ve ever wondered whether freezer meals still mean a million extra ingredients and a giant grocery haul… nope.

A handful of simple add-ons, easy sides, and you’ve got:

✅ Marry Me Chicken
Added half & half, orzo and spinach at the end in the slow cooker plus cacio e pepe roasted cauliflower.

✅ Cajun Beans & Sausage
Served over precooked rice that I heated up in the microwave and added butter and seasonings.

✅ Mango Chicken
Made quesadillas, tortillas, cheddar cheese, with guacamole and sour cream on top.

✅ Brown Sugar Meatloaf
Served with stick of butter rice and roasted broccoli

✅ Homestyle Chicken & Noodles
Nothing, complete meal

✅ Enchilada Chicken & Rice
Topped with cheddar cheese and sour cream

✅ Texas Roadhouse Pot Roast
I added a few cut-up potatoes to the slow cooker with the meal, then heated up some frozen green beans and carrots that were already seasoned.

Less prep. Less mental load. More “what’s for dinner?” already handled.

Last night I created two freezer meal recipes. I even took some mental notes, now I just need to write them down. The test subjects (my family) will be the guinea pigs again. One was even a requested meal. Think hot honey mustard sheet pan and pierogi and kielbasa slow cooker. If they make it out alive, I'll report back. 😂

April menu is officially open! 🙌

Seven home-style freezer meals, assembled fresh in a licensed kitchen right here in Alden. Raw and ready for your oven, slow cooker, or skillet, you just cook it.

This month I've got everything from Marry Me Chicken to a Texas Roadhouse-style Pot Roast. Something for everyone.

I planned this April menu around meals my own family. Marry Me Chicken was outstanding. I added orzo, spinach and heavy cream. Brown Sugar Meatloaf had my husband raving just from the smell before even tasting it this go around. If it doesn't pass the family table test, it doesn't make the menu. That's just how I do it.

Easter is just over ONE week away. 👀

Half pan orders close tomorrow evening. If you're hosting and you don't want to spend Easter Sunday chained to the stove, now's the time. If you need a dish to bring but don't have extra time. Or maybe you don't know how to cook or quite simply don't want to. Now is the time to order. Limited quantities available.

Sausage Breakfast Casserole, Macaroni & Cheese, and Manicotti will be part of our holiday tables next weekend.

Each pan feeds 8–12 people. Made fresh, frozen, heating instructions included.

I need to clean out the freezer! I have extras of a variety of meals that I have made in the last month for various reasons. Slightly discounted prices, when they are gone, they are gone for this price. I may have more tucked away and I will add when I am able to clean it all out.
