Coconut oil isn’t only bad for our cholesterol. It can increase insulin resistance, which can eventually lead to type 2 diabetes. This worsening of insulin resistance was seen even after study participants made healthier lifestyle choices, such as increasing intake of fruits and vegetables, cutting down on sugars and animal fat, and walking for exercise.

Dick Gregory said ""Because I'm a civil rights activist, I am also an animal rights activist." He stood on picket lines during the civil rights movement, endured beatings, was jailed, fasted for causes he believed in, and later in life became one of the most outspoken vegan voices in American public life. For him, the two struggles were never separate.

He often argued that violence has one grammar, no matter who receives it. The same instincts that let a society ignore the suffering of one group let it ignore the suffering of another. Once you see cruelty clearly in one place, you start recognizing it everywhere.

That is why he refused to draw a line between people and animals. He said humans and animals suffer the same, bleed the same, and die the same. He called it a taking of life that we do not have to be part of.

His words still hit today because they ask a difficult question. If we say we believe in justice, do we mean it only for people who look like us? Or do we mean it for every living being who feels fear, pain, and the will to keep living?

Gregory never treated compassion as weakness. He treated it as strength. He believed in a wider circle. And decades after his passing, that circle keeps growing every time someone chooses kindness over convenience.

Sanchez has spent decades in community advocacy, even helping build an edible food forest on a former industrial site and founding a vegan Dominican catering company.

His mandate is to widen access to healthy, affordable food, with a sharp focus on low-income communities of color where fresh whole foods are hardest to find.

It builds on a city that already serves plant-powered lunches to nearly a million schoolkids and has stripped processed meats from public schools, hospitals, and shelters.
