🥬 Cottage Cheese & Spinach Crustless Quiche
📝 Ingredients
1 cup cottage cheese
4 large eggs
1 cup fresh spinach (chopped) (or ½ cup frozen, thawed & squeezed dry)
½ cup shredded cheese (cheddar, mozzarella, or feta)
¼ cup milk (or almond milk)
¼ cup onion (finely chopped)
1 garlic clove (minced)
½ tsp salt
¼ tsp black pepper
¼ tsp paprika (optional)
¼ tsp dried oregano or Italian seasoning
1 tbsp olive oil
👩🍳 Instructions
Preheat oven to 180°C (350°F). Lightly grease a baking dish or pie pan.
Sauté veggies: Heat olive oil in a pan, cook onion and garlic until soft. Add spinach and cook until wilted. Let cool slightly.
Mix eggs: In a bowl, whisk eggs, cottage cheese, milk, salt, pepper, and spices.
Combine: Stir in cooked spinach mixture and shredded cheese.
Bake: Pour into prepared dish and bake for 30–35 minutes, until set and lightly golden.
Cool & serve: Let it rest 5–10 minutes before slicing.
