For a vegetable, corn certainly gets the side-eye from healthy eaters. However, corn has a place in a nutritious diet, especially when it's in season and readily available like it is now. Did you know that fresh corn is a low to medium glycemic index food and full of nutrients? In about half a cup of corn, you get 4 grams of protein and 2.4 grams of fiber, which aids gut health. Corn also has manganese, phosphorus, magnesium, folate, potassium, and some B vitamins.

Serve with fruit dip: combine dairy free unsweetened yogurt with cinnamon, a little honey, and vanilla extract.

Who remembers the cabbage soup diet? I did this with my mom and it was gross! I was hungry! 😄 How about the grapefruit diet?!!! Oh, that was a good one! NOT!! Or 2 shakes a day and a "sensible" meal...I'll leave the name out but you know what I'm talking about. We've all tried it!
