Annie grew up eating cracked wheat porridge as a cozy winter breakfast, and this loaf is her delicious nod to those memories. The cracked wheat is soaked overnight and cooked into a warm, creamy porridge before being folded into the dough. And that addition does some really special things: It keeps the bread moist and fresh for longer, adds a wonderfully creamy, tender crumb, and gives each slice a depth of flavor that plain sourdough bread simply can’t match.
This recipe uses our Sifted Artisan Flour as the base, with 200g of your choice of whole wheat flour — Whole-Kernel Bread, Turkey Red, Red Fife, Einkorn, or Black Emmer all work beautifully here.
