I love some good blackened shrimp!! Yes please!!

20 MINUTE SKILLET BLACKENED SHRIMP FAJITAS

Ingredients:
18 oz large uncooked shrimp, peeled and deveined (2 Leanest)
1 teaspoon chili powder (2 Condiments)
1/2 teaspoons paprika (1 Condiment)
1/4 teaspoon onion powder (1/2 Condiment)
1/2 teaspoon cumin (1/2 Condiment)
1/2 teaspoon garlic powder (1 Condiment)
1/4 tsp salt (1 Condiment)
2 teaspoons olive oil, divided (2 Healthy Fats)
1 red bell pepper, sliced (2 Greens)
1/2 green bell pepper, sliced (1 Green)
1 yellow bell pepper, sliced (2 Greens)
1/2 cup scallions, diced (1 Green)
3 oz sliced avocado (2 Healthy Fats)

Directions:
In a large bowl add the shrimp, chili powder, paprika, onion powder, cumin, garlic powder, and salt. Set aside.
In a medium sized skillet over medium high heat, add 1 tsp olive oil, bell peppers, and scallions. Saute until tender about 5-7 minutes. Slide to the side of the skillet
Add 1 tsp olive oil and shrimp and cook for 2-3 minutes or until no longer pink.
Divide into 2 equal portions and serve each portion with 1.5 ounces avocado.

Makes 2 Servings. Per serving: 1 Lean, 3 greens, 2 fats and 3 Condiments

Easy dinners during the week are a must have! 🎉🎉🎉 Delicious dinner in 20 minutes!

Greek Style Chicken Bowl

Ingredients:
• 4 tsp extra virgin olive oil
• 4 tbsp reduced-fat feta
• 1 tbsp fresh oregano, minced (or 1 tsp dried)
• 2 garlic cloves, minced
• 4 tbsp lemon juice
• 2 cup lettuce, washed and torn
• 2 cups riced cauliflower
• 1 cup diced roma tomatoes
• 1½ lbs. rotisserie chicken breast, skin-removed, chopped
• 2 cups riced zucchini

Directions:

1. Combine and cook riced cauliflower and zucchini in microwave or steamer, about 6 to 8 minutes until tender.

2. Combine the garlic, oregano, lemon juice, oil, and feta to make the dressing.

3. To serve, neatly arrange a ½ cup of lettuce, one cup of riced cauliflower and zucchini, a ¼ cup of tomatoes, and 6 ounces of chicken in a bowl. Drizzle 1½ tablespoons of the dressing over top and serve.

For those following my healthy lifestyle, this dish makes 4 servings. Each serving is 1 lean - 3 greens - 1 healthy fat - 3 condiments.

MOUTHWATERING MONDAY!!
Cauliflower Alfredo Spaghetti Squash with Basil & Mushrooms

Ingredients:
· 1 cup (5.26 oz) fresh red bell pepper (diced) - (2 greens)
· 1 cup (2.46 oz) fresh white mushrooms (diced) - (2 greens)
· ½ cup diced onion - (8 condiments)
· 1/4 cup fresh basil (diced) - (1/2 condiment)
· 2 tablespoons coconut (or a different type) oil - (6 healthy fats)

For the Sauce:
· 5 cups (17.6 oz) raw cauliflower florets (10 greens)
· 2 cups unsweetened almond milk (2 condiments)
· 5 cloves organic garlic (freshly crushed) - (5 condiments)
· 2 tablespoons large flake nutritional yeast - (6 condiments)
· 1/4 tsp pink Himalayan salt - (1 condiment)
· ¼ tsp cayenne pepper (1/2 condiment)

For the Spaghetti Squash:
· 5 cups (27.3 oz) cooked spaghetti squash (10 greens)
· 2 teaspoons organic extra virgin olive oil (2 healthy fats)

Directions:
For the Spaghetti Squash Pasta:
Prepare spaghetti squash by cutting the spaghetti squash in half. Scrape out all the seeds from the inside. Rub olive oil on the inside of the spaghetti squash. Bake face down at 350 degrees for approximately 45 – 50 minutes. Use a fork to scrape the inside of the squash out to use as “pasta.”

For the Sauce:
Cut the cauliflower into florets and boil in a large pot for about 15 minutes or until tender, and then strain. Put the cauliflower, milk, nutritional yeast, pink Himalayan salt, cayenne pepper and garlic in a blender or food processor and blend until smooth and creamy.

For the Vegetables and Assemble:
Dice the red bell peppers, onions and mushrooms. In a saucepan, sauté the red bell peppers, onions and mushrooms until they are tender. Combine the sauteed vegetables, spaghetti squash pasta and cauliflower alfredo sauce. Toss with fresh chopped basil right before serving. Enjoy!
Serves 8. Per serving: 3 green, 3 condiments, and 1 healthy fat

Meatball Lasagna
Ingredients:
12 turkey meatballs
1/2 cup part skim ricotta cheese
1/2 cup 2% Mozzarella Cheese
2 cups/180 g (cooked weight) yellow squash or zucchini or spaghetti squash
1 cup Italian diced tomatoes (less than 5 g of carbs per 1/2 cup)
1/2 tsp garlic salt
1/2 tsp dried basil
4 tsp grated parmesan cheese

Directions:
Preheat oven to 350 degrees.
Layer zucchini or squash slices along the bottom of a medium sized casserole dish. Spread ricotta cheese over the squash. Sprinkle garlic salt and basil over the ricotta cheese and squash slices. Combine diced tomatoes with meatball pieces in a small bowl. Pour over ricotta cheese. Sprinkle mozzarella over meatballs and then top with grated parmesan cheese. Bake for 25 minutes or until cheese is melted. There will be some water or liquid from the squash or ricotta. This is normal. I just drain it from the casserole dish by tipping the dish slightly to the side while making sure the lasagna doesn't pour it as well. Enjoy!
